New Red Potato Salad

This turned out very well. I omitted the white vinegar, and added some Dijon mustard and a couple tablespoons of Miracle Whip because I like the little bit of tang it adds. I also added some finely diced white onion, red bell pepper, a bit of paprika, garlic powder, and just a tiny bit of cumin for some spice. My husband prefers it with some bacon, but I'm not a big fan, so I've made it both with and without, so I guess it just depends on your preference.

Bean Quesadillas

These turned out awesome! I made them one night when I felt like Mexican, but didn't want anything too heavy. Made a couple changes: used canned corn instead of frozen, and substituted Rotel for the tomatoes for an extra kick. Also added some ground red pepper, but we tend to like really spicy foods, so I wouldn't recommend that unless you like the same.

Salmon in Lemon-Dill Sauce

This is an awesome recipe. I only made a few changes to try and cut out some calories: I used almost all milk with just a splash of cream and used only half the butter. I did add more spice for flavor, and added some capers as well. I also used some corn starch to help thicken, and will use more next time. The biggest change was I baked the fish for 10 minutes at 350, added the sauce to the pan and upped the temp to 375, and baked for another 20-25 minutes. It turned out wonderful!

Paprika Chicken with Sour Cream Gravy

Really very good! One of my favorite chicken recipes! I added some cajun seasoning and minced garlic to add some more flavor, and served it over steamed rice.

Smothered Pork Chops

My husband and I used this recipe, but changed a few things in order to add some more flavor. Instead of browning sauce we used about 3/4 tablespoon of cajun roux. We also cut down on the flour, perhaps a little too much since the sauce we just a bit runny. I also threw a couple cans of sliced mushrooms in, and added plenty of cajun seasoning and some cayenne pepper. It ended up being very tasty. We'll definitly make this again!

Buttery Rolls

I made these for Thanksgiving and they turned out wonderful. We actually mixed the dough the night before and refrigerated it over night. I just gave them an extra couple minutes to rise after shaping the rolls.

Chicken and Broccoli Braid

Wow....what a great idea. My boyfriend and I made this together one night. We had so much fun doing it together (we had a little trouble figuring out the braid part, so we had to get creative) and enjoyed the leftovers a couple days later.

Cajun Chicken Pasta

This was a great recipe! I had read some of the other suggestions about using sour cream and thought that was a good idea. My boyfriend suggested using cream of mushroom, so I used half of each, which I think added an interesting flavor. I also used a bit more Tony's than others might since I like my food a bit spicy, but next time I might just blacken the chicken instead. All in all this was a great dish!
