New Red Potato Salad
This turned out very well. I omitted the white vinegar, and added some Dijon mustard and a couple tablespoons of Miracle Whip because I like the little bit of tang it adds. I also added some finely diced white onion, red bell pepper, a bit of paprika, garlic powder, and just a tiny bit of cumin for some spice. My husband prefers it with some bacon, but I'm not a big fan, so I've made it both with and without, so I guess it just depends on your preference.

Bean Quesadillas
These turned out awesome! I made them one night when I felt like Mexican, but didn't want anything too heavy. Made a couple changes: used canned corn instead of frozen, and substituted Rotel for the tomatoes for an extra kick. Also added some ground red pepper, but we tend to like really spicy foods, so I wouldn't recommend that unless you like the same.

Salmon in Lemon-Dill Sauce
This is an awesome recipe. I only made a few changes to try and cut out some calories: I used almost all milk with just a splash of cream and used only half the butter. I did add more spice for flavor, and added some capers as well. I also used some corn starch to help thicken, and will use more next time. The biggest change was I baked the fish for 10 minutes at 350, added the sauce to the pan and upped the temp to 375, and baked for another 20-25 minutes. It turned out wonderful!
