Spiced Eggplant Indian Style

Excellent flavour after tweaking from other reviews (garlic, salt, curry powder, ground coriander, etc). Baked for 15 mins at 350 and baked cherry tomatoes for the same time in lieu of canned tomatoes. Paired with brown rice. Fabulous & easy. Will make again & again.

Sugar-Free Raisin Bars

Made these for a diabetic friend...I hate sugar substitute & initially didn't plan on even tasting them to see if they came out well...Well I ended up saving half the pan for myself & my family!! They are INCREDIBLY delicious and I couldn't taste the Splenda. I used the granulated Splenda, and I agree with others I think you could absolutely get away with 1/4 cup instead. As for other reviews about not being low calorie enough - nobody likes a diet cookie that tastes yucky. These are certainly a GREAT alternative to some 500 calorie chocolately fudge dessert. Will make again & again.

Mojito Fruit Salad

Excellent flavor. For more of a cooling mint flavor during these hot summer months I would recommend perhaps doubling the mint, because at the current amount it's more of a "hint" of mint that you only get with the occasional bite so that makes the dish a bit inconsistent. However when refrigerated overnight the flavors get to meld together more, creating a minty marinade juice at the bottom of the bowl.

Terrific Turkey Chili

Added 1 can of black beans and 1/2 can of corn + juice from the corn at the suggestion of other reviewers. Simply the BEST chilli I've ever made. Rave reviews all around. A+ will make again soon.

Rib Eye Steaks with a Soy and Ginger Marinade

Holy cow. I read all the reviews and thought ok but HOW amazing can this be? The answer is ALL THAT AND THEN SOME!! Marinated for 12 hours, tender, juicy, amazing-stop-you-in-your-tracks flavor. Used Shiner Bock beer. Cannot wait to make it again.

Sausage, Bacon, Apple and Cornbread Stuffing

Honestly, THE BEST stuffing I have ever had, and it is such a hit, I have found my staple stuffing!! Thankyou so much for submitting this. Even if you leave out the sausage its still fantastic. I like to spice the apples first: boil apples in cranberry juice/cranberry-orange juice, reduce heat + simmer, add cinammon & nutmeg.

Caramelized Salmon with Cherry Salsa

I call this recipe "My Old Faithful" whenever I need to make a dish that is easy, light, and guaranteed to impress. Its also so easy to make that its a main player in my monthly repertoire of family dinners & lunches. EVERYONE always raves on and on about it and asks for the recipe. The orange or lemon peel + brown sugar is what really does it I think. Often times I skip the cherries entirely and it still comes out fantastic, or substitute in mango or pineapple for a beautiful caribbean dish. I absolutely love this dish and cannot recommend it enough.

Polish Sausage with Red Cabbage

I make this recipe every 2 weeks or so. I do not rinse the cabbage in boiling water. I use 1 cup of wine, omit the cornstarch, and just slice the sausage instead of dice. Yes, its a long cooking time but worth it. I often save the left over sauce and add it to the water that I boil rice/grains with. Creates a beautiful color and unbelievable flavour.

Pebber Nodder (Danish Christmas Cookies)

Really really easy, and great for the non-chocolate & non-nuts crowd...yet even I as a chocaholic still loved these. The only thing was I quadrupled the spices and even added a bit of ginger to the dough. They still turned out very lightly scented & lightly flavoured.

Quick and Easy Spinach Bread

Very easy to make. Note to self: do not skip flouring the aluminum foil otherwise you will shred the roll trying to separate it from the foil after baking! Flavor was good but not great. I think next time I might add more flavors like roasted red peppers or sun dried tomatoes or sharp cheddar cheese.

Stuffed Jalapenos

Stuffed the (seeded & de-ribbed) jalapenos with cheese & sausage instead. Waay easier and just as yummy. These are definitely ultra spicy, which I love, but may have to warn party guests.

Chocolate Covered Caramel Surprise Cookies

I thought these would be perfect for my taste, but I was shocked when I didn't love them. They were just *shrug* okay. I think the flavor is too subtle and creamy - it needs something to jump out, flavour wise. Maybe cinnamon? I used the rolos and they came out fabulously gooey.
