Chicken with a Creamy Marsala Sauce

All 6 of us here loved it, not a common occurrence. Very easy to make, great flavor. I used half and half instead of heavy cream and it was fine.

Carrot Cake III

This was a delicious and moist cake. I prefer to rate recipes on how it was written (too many adjustments and you are no longer rating the original recipe, but your own). I made the cake exactly as the recipe instructed, omitting the pecans, and it was fantastic. In fact, I am making a larger cake for a crowd of 40 this weekend. Definitely give it a try!

Creamy Rice Pudding

Great classic recipe. I subbed evaporated milk, measured nothing, and screwed up on the order of things to cook and it still came out really good. Everyone in the family loved it and it was a good way to use up leftover rice.

Fajita Marinade II

I dumped all the listed ingredients in a bag, marinated in the bag, and cooked the meat in the juice. It came out great. The ingredients do sound odd, but it does work.

Very good. I do miss the vegetables that are usually in chicken and dumplings, though- next time I'll experiment a bit with adding vegetables at the end.

Old Fashioned Coconut Cream Pie

THE best coconut cream pie ever. I made some of the recommended substitutions: 1.5 cups of half and half, 1.5 cups of coconut milk. Used cornstarch instead of flour and used whipped cream instead of cool whip (I can't stand that stuff). Made the custard in the microwave and it came out beautifully in five minutes, stopping to whisk every minute. This was a fabulous pie and I will make it many times again.

The Best Vegetarian Chili in the World

Pasta with Mushroom and Zucchini Sauce

A good basic sauce. Could be tweaked a little to give it more "kick" (red pepper?). I pureed all the zucchini and my squash-hating teenager never even knew it was in there; she loved it.

Excellent recipe! Very close to the original. A note- they do go stale-tasting very quickly. Probably not a problem as they likely won't last long anyway!

Quick and Easy Alfredo Sauce

I wasn't too sure about this recipe but it came out great. Tasted pretty close to restaurant-quality alfredo sauce. I put a touch of pepper and the tiniest bit of nutmeg on the top and I thought it helped bring out the flavor, but the sauce was great exactly as the recipe makes it. Easy too!

Diana's Hawaiian Bread Rolls

Half way through making this I discovered that I was out of lemon extract, so I used fresh lemon juice instead. The rolls came out beautifully. They looked great, smelled great, and tasted fabulous. The bread had a perfect texture. Will definitely make these again! Thanks for sharing a great, and easy to make, recipe.
