It's Chili by George!!

Just like other reviewers, I played around with this. I doubled all spices except the chili powder, added two adobo chilis in their sauce, and left out the green pepper (just don't like it). VERY yummy. Serve it over macaroni, and I always add a little shredded cheddar. Mmm.

Moroccan Tagine

Delicious! Per suggestion, I added a few shakes of cinnamon and an equivalent amount of cumin to balance the coriander. Had some dried dates on hand (from my last lamb tagine), and tossed those in. They really added another level of flavor and I suggest it. Served over brown rice, and hubs was glad there were leftovers!

Garbage Quiche

Awesome! I made this in two separate bowls and pans using different ingredients (ham, cheese, onions, mushrooms in one and turkey, cheese, brocc, and spinach in the other). I cut the center out of some squares of tin foil and covered the crust area after the first fifteen minutes to keep it from burning. Worked great! Cooked perfectly and set up in 10 minutes afterward. Got tons of compliments.

Tuna Noodle Casserole from Scratch

Delicious! Worth a little more effort for a lot more taste. This really hit the spot. I also diced up some red pepper and sauteed it with the onion before I popped it in the oven. Added some color and flavor.

Pan-Seared Scallops with Pepper and Onions in Anchovy Oil

Rosemary Turkey Meatloaf

Really lovely! I made the night before and left it in the fridge. I had a red pepper and fresh parsley on hand, chopped both up, and added them. I wouldn't make it any other way!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Very tasty! Made the slaw and mayo as directed and enjoyed it with both peppers in. Hint on those who wanted healthier options: Greek yogurt sub for the yogurt. It's more tangy. I also prepared the panko tilapia and baked for 25 minutes at 400 in an olive oil coated pan. Served with some plain steamed carrots and a bubbly flavored water. Really refreshing.

Excellent and Healthy Cornbread

Lovely! I ate last night (with honey) and today (with maple syrup) and it stayed moist enough to enjoy again. Great texture and healthy alternative to oil. I did add a bit of honey to the batter, as well.

Goat Cheese Pizzas

Delicious! I sauteed some thinnly sliced onions and mushrooms for the top. I happened to have roasted red pepper sauce (homemade) from a previous recipe and used that for more of a "pizza" feel. The fresh basil is key!

Spectacular. I followed this recipe to a T and came out with some great baked beans that the entire party enjoyed. Do use some butter beans, since they add a lot of fun variety, even if just in shape!

Sea Bass Cuban Style

Absolutely delcious and easy to follow recipe. I'd never worked with sea bass before, and it is a dense fish. I was worried I over cooked it, but it came out great. Used ghee instead of butter because of a lack of unsalted butter. Do use something unsalted, however, because the capers do all of that work. Delicious and easy. I live in a little apartment and we ate such a fancy meal off of plastic plates... Compliments to the recipe, though!
