About this Cook
I'll be honest - I'm a total Amelia Bedelia when it comes to the kitchen. I have very little clue as to what I'm doing and, with a husband who does most of our meal cooking with gusto and ability, I don't try my hand at stuff too often. But having two toddlers has brought out the Suzy Homemaker Syndrome, so now I'd like to increase my skills... and there's nowhere to go but up!

My cooking triumphs
A long time ago I used a recipe to make peach chicken quesadillas and they ROCKED. I can't remember where I got the recipe now and haven't made them since.
My cooking tragedies
Where do I start? - I used a sugar substitute instead of actual pure cane sugar to make roasted pumpkin seeds and wound up with roasted seeds surrounded by clumps of burnt-looking kind of sweet-tasting granules. - I let my husband's rice cooker stay on too long once and created a nice large quantity of tough rice. Poor guy muscled his way through 1/2 of it before throwing it away (with my blessing).

Chicken Enchiladas II
This was my first foray into making chicken enchiladas, so it's a good base recipe. Second time making it, I used red onion instead of green onions. I also used canned enchilada sauce with the cream of mushroom sauce. This provided a larger quantity of sauce which I found really helped (first time around it wasn't quite enough), and the red onions provided a bit more flavor without scaring off my nitpicky kids. I serve with white steamed rice and southwestern corn as sides.

Mexican Cucumber Salad
I left out the tomatoes (husband hates tomatoes) and red pepper flakes (didn't have any), and added a few dashes of onion powder and it tasted crisp and fresh with a great flavor to compliment our Mexican fare.

Iced Pumpkin Cookies
So yummy! I did have to flatten the cookies out on the sheet, as essentially they are cake. Makes it easier to evenly glaze later. Apriva (no calorie sweetener) substituted great for white sugar, so I don't feel so guilty about loving these!
