Brownie Caramel Cheesecake

I'm not a big fan of the cheesecake part of this recipe. It turned out way too eggy for me. I'll try one less egg next time.

Fabulous Wet Burritos

Husband loved it! Said "make this anytime you want." We had a lot of sauce leftover, but he's happy to use it in the morning on eggs. Thanks for a great recipe! I made it exactly as written (except I used venison burger).

Easy Biscuits

make sure you pat these to be at least 1/2 in thick and watch them in the oven. mine were too thin and the 20 minute minimum made them too crispy. they were still good smothered in homemade sausage gravy though!

Chocolate-Mint Creme Cookies

i followed the recipe to a "t" and took the cookies out at 8 minutes as suggested. they turned out great! but the quantity is misleading. one batch made 48 cookies, but when you sandwich them together you technically have 24 servings, not 48 as the recipe suggests. Perhaps I made the cookies too big, but I used a small rounded teaspoon and got 24 cookies on each sheet.

Amazing with cod! My 2 year old asked for 3rds! But I tried the same recipe with whitefish and it was a disaster. Use only cod for best results! I'll be using this recipe all the time! Only 1/2 cup of butter is really needed for the broiling.

Chocolate Zucchini Muffins

Great muffin. Dense, chewy texture. Not dry whatsoever. I didn't have the cardamom or cloves, but that would have made them even better. The cinnamon with the chocolate is incredibly good. I subbed coconut oil and butter for the veggie oil and they turned out amazing. I'll make these again for sure.

Sausage and Egg Casserole

I took these to work for a birthday breakfast and everyone loved them, but me being a critic I thought they were too watery, most likely b/c I added an extra 2 eggs and 1/4 cup milk to fill the 9x13 pan. Another 10 minutes of cook time would have been much better. Great with Red Hot and a few chunks of potato inside!

Peanut Butter Brownies II

I added an extra 3/4 cup of peanut butter in place of one of the packages of cream cheese. I cooked them for 35 minutes. They were a little dry, but still quite good. I probably won't make them again.

Pineapple Chicken Tenders

very good and easy to make! i didn't skewer the chicken. Instead, i just threw everything into a baking dish, including pineapple chunks and chopped green pepper. it turned out very moist and disappeared so fast!

Caribbean Sweet Potato Salad

My super picky husband loved this recipe and kept stealing spoonfulls before dinner! I didn't have Dijon mustard so used regular yellow instead and it still tasted yummy. I also omitted the cucumber as I didn't have any on hand and I'm glad I did b/c the lack of excess water meant that this salad could stay refrigerated for quite a few days and still taste great, if not better than the first day! I also just threw in the peanuts whole to save time. A keeper and I will make again! Thank you so much for the great idea!
