Salmon Ceviche

I only give this 4 stars because I don't think salmon is a good choice of fish to use in ceviche. It was just a bit heavy and meaty for my taste. I have used a very similar recipe with tilapia and pollock resulting in a more delicate dish. This recipe is very good and I wouldn't hesitate to use a lighter fish with it. Unlike others, I found the salt content perfectly acceptable.

Buttery Soft Pretzels

A great recipe! These have a very slight sweetness to them. With the kosher salt topping, the sweetness is balanced out very nicely. The consistency was perfect, nice and chewy. I actually had the baking soda water simmering when I dipped them. I did have to add about a 1/4 cup more water when mixing... no big deal, could be my flour. My only other negative is that I would use cornmeal instead of greasing the pan. The added oil hot a little hot and over cooked some of the bottoms. Again, could be my oven.

Mexina Salsa Verde

Since I had a million green tomatoes and peppers still in the garden and it is going to frost this week, guess what I made today? This is really good. I didn't have any lime juice on hand so I used 2 tsp of apple cider vinegar. I did add about 2 tsp of minced garlic too.

Mexican Rice II

Excellent recipe. I doubled the batch and followed to a tee. This rice had the texture of a cloud and the subtle flavors that accompany a Tex/Mexican meal perfectly. Served with homemade tortillas, left over pork roast cooked in sofrito, frijoles refritos and fresh farm cheese.

General Tsao's Chicken

I'm not even sure if I would call this a Chinese-ish dish. But it is delicious. And Easy. I have even used pre-battered frozen chicken breast strips with this recipe and it's wonderful. Just sprinkle the strips with a little 5-spice and bake as directed. when done toss with the sauce and other ingredients. I've also substituted the vinegar with an equal amount of dry white wine. Equally as good. Serve with a side of jasmine rice. We eat this at least twice a month now.

Basic Crepes

I didn't actually make these, my wife did. They were perfect. I hadn't had a crepe in over 10 years and what a treat they were. the consistency was wonderful. I rolled mine with ham, swiss cheese and onions. The kids preferred fruit preserves. a definate repeater.

Authentic Mexican Tortillas

I've made these about half a dozen times now. I use the KitchenAid® to mix the dough and follow the recipe exactly - with one exception, I use near boiling water. Perfect every time. Place into zip lock bag when they are warm to keep moist and pliable.

Absolutely the best pita recipe. I often serve with grilled chicken, bacon, fresh spinach, onions & tomatoes. The kids dowse it in ranch.
