Roasted Tomatoes with Garlic

OMG! A friend recommended this to me. I have a ton of Amish Paste tomatoes which I had shared with her. We cut them in half and cooked them long enough to be almost dry. Then we ran them thru a sieve which made a nice sauce. I had mine on pizza crust and she had hers on pasta! Delicious. I will be making a lot of this; I plan to freeze the sauce for later.

Rhubarb Strawberry Cobbler

I had never even eaten rhubarb so I was curious as to how tart it might be. I love the recipe. I was a little unsure when I mixed in all that oil but then when I added to water and it did actually ball...I was amazed! It wouldn't have worked if I hadn't rolled in-between wax paper, or what I used...the expensive non-stick alum. foil. The crust was awesome...wished I had put it on the bottom too!....cause it is my favorite part!

Sorry, but I felt that something was missing and the only thing that I left out was the broccoli. I think the dressing is very good in fact I made extra....but it still needs something....

Focaccia Bread

I made this tonite! It was delicious and as previous reviewers said, it is very easy. I had never used thyme before so I wasn't sure, only added 1/2 the called for. I made a little bit of olive oil dip with rosemary and lemon and it was wonderful!

In spite of the trouble that I had making these....(my dough came out like pancake batter and had to add lots more flour)....they turned out delicious. The crust was chewey. I will make again!

Asian Orange Chicken

I thought that this was delicious. I used 1 cup water and 1/2 cup OJ, as suggested and I dipped the chicken in flour mix, then egg, then back in the flour mix also as suggested. The chicken was delicious and tender. Next time I will add some vegetables. Definitely a keeper. Thanks!

Best Ever Chocolate-Free Blondies

Sorry, but I didn't care for it at all. The gooey brownie part, which was good, didn't go with the peanut butter chips and pecans! I only used a little over a cup of the chips. I think they might be really good without the peanut butter chips.

Jalapeno Pepper Jelly

This is delicious. I can't wait to share it with friends. After reading the reviews I was worried about it setting up so I did follow the instuctions to cook 10 min, add the pectin and cook another 5 min. Mine is almost too set up. Next time I will try pre-cooking 5 min instead of 10.

Too Much Chocolate Cake

Definitely chocolatey! Served to ladies church group and they loved it. It is moist and chewey. I used the Satiny Chocolate Glaze also.

Chicken Rotini Stovetop Casserole

I loved this dish! I cut the recipe in 1/2 as DH doesn't care for leftovers and it is just the 2 of us. I added some garlic powder and salt. Next time I will throw in some mushrooms, or at least fix them on the side for me as DH doesn't like them. Thanks for the great recipe.

Easy Blender Salsa

I make salsa for the first time this week end using this recipe. It was definitely a hit. My BIL asked for the recipe. I used my own fresh tomatoes from the garden, added garlic salt. I found the 1 jalepeno to be not hot enough so I added 1/2 can Rotel. I made another batch yesterday and used 1 Salsa pepper. Yowee! It was perfect! I will be making more of this!

The Best Rolled Sugar Cookies

These are great cookies! I hadn't made cut outs for years. These truly do make it easy! I baked them on parchment paper lined pans @ 400º for 7 min. Grandaughter decorated them with buttercream icing and sprinkles and they were delicious!

Melt - In - Your - Mouth Shortbread

These cookies are great! I followed advice and whipped them in my KA. I added a pinch of salt. Baked at 350º on parchment covered baking pans til lightly brown around the edges. My 6 yr old grandaughter iced them with buttercream frosting and topped with sugar sprinkles. They were delicious!

Italian Sausage Lasagna

I have a very similar recipe from Better Homes and Gardens that also uses sausage and it has always been my favorite. This one interested me because it said it served 3. For just my husband and I for me to make lasagna, it means lots of leftovers which he eventually tires of. This still made too much but it was very delicious. This will be my favorite lasagna recipe from now on!
