Caramelized Baked Chicken

This was great! It was borderline over-salty though. I didn't have low sodium soy sauce, so that would probably do it. I adjusted the sauce like a lot of reviewers did by adding more ketchup and less honey. Cornstarch would've been helpful too. I highly recommend adding a chopped up sweet potato under the chicken while it bakes! I also had some leftover caramelized onions that I threw in too, which was awesome. I served it all over some quinoa and it was just fantastic!

Roasted Vegetables

Ya, I agree with all of the great reviews! I've made so-so roasted veggies, but these are outstanding! It's funny cause you don't really taste the lemon or any particular herb, just sweet roasty deliciousness! I just used peppers, garlic,onion, tomatoes, and some mushrooms and shallot.

Easy Chourico Soup

This was really great and hearty! This had a lovely balance of sweet and spicy. It seems very healthy too! I did make some changes though. I used chicken chorizo, black beans instead of garbanzo, and zuccini instead of spinach.

Speedy Huevos Rancheros

This was awesome and really easy!!! I didn't use bacon because I forgot to buy it, but I'm sure that would make it even better. It's great with some refried beans too. I've made this a few times now. I just use 2 cans of Rotel tomatoes with chiles to make it even easier. Yummmm!

Italian Sausage Soup

Completely fabulous! I used chicken broth and chicken italian sausage and omitted the spinach. I've made it twice in one month! Even my toddler niece loves it!

Caramelized Onion and Gorgonzola Pizza

Holy Deliciousness!! This was soooo good I've come to crave it. I actually hate gorgonzola and blue cheese, so I used smoked mozzerella and it's an amazing combo. Don't forget toasted walnuts. You should definantly try it

Zucchini Pasta Casserole

Very fresh and tasty. I followed the recipe pretty closely, but I think adding tomatoes would be a pretty good idea. Good use of zuccini though.

Mashed Chipotle Sweet Potatoes

I just made this recipe with about 5 sweet potatoes mashed and two whole chipotle peppers (plus some added adobo sauce) and brown sugar and boy was it good!! next time I might try scraping some of the seeds out first for a smoother texture.
