Chicken Gruyere with Sauteed Mushrooms

I really enjoyed the rich flavor of this dish - the sauce was amazing! Because some reviewers had said the chicken was bland, I marinated my chicken breasts in OVV, garlic, and white wine. I also dipped it in egg prior to the flour and browned it in OVV,instead of butter,and added more crushed garlic as I think there is no such thing as too much garlic. I made a rue with the extra seasoned flour after the mushrooms and onions were soft to which I added wine to make a decent amount of sauce. I just eyeballed the amount, but 1/2 cup of wine was not enough - in fact, I only cooked 2 large chicken breasts and used the amounts of stuff it had called for 4. I used Jarlsberg as I was out of Gruyere. I served it over white rice - and the sauce over the rice - fabulous!! I'm sorry I don't have any left for lunch today!!!!!

Beef Stroganoff III

This was really tasty! I used sirloin steak(sliced very thin), OVV, fresh mushrooms (canned are for dire emergencies!),low sodium beef broth and fat free sour cream to try to make it a bit healthier. It was great over egg noodles but I was disapointed that there were not any leftovers!!

Lemon Horseradish New Potatoes

These were absolutely awesome! We love horseradish and lemom and were surprised at how delicious and mellow the flavors became after baking. I often spread potatoes onto a baking sheet with olive oil and various mixes of spices. I think I'll try this mix to see how it turns out. We like crisp potatoes but don't like to fry. Definitely will make again!

Hot and Spicy Tofu

I really liked the flavors of this and will definitely make it again. I may use part shrimp, part tofu as my husband doesn't like the texture of tofu but I do.

Thai Chicken with Basil Stir Fry

With all the reviews I read I was really afraid that this would be too salty or sour so I cut down on both the soy and rice vinegar. Mistake! The dish had a nice sweet, spicy kick (combo of thai chille sauce and red pepper flakes) - but definitely needed more salt to bring out the other flavors! I was out of basil, so I substituted cilantro which gave it a nice smooth kick. Next time I will use the recommended amounts of soy, rice vinegar, and fish sauce and try adding brown sugar. I will make it again, for sure, just won't worry about the salt content! I'm still giving it a 5 as I am sure it would have been much better just left alone!!

Oatmeal Raisin Cookies VII

Very delicious and really easy! I liked that it made a small (22) batch of cookies(I rolled the dough into balls and baked til the edges browned). I did use 1/2 wheat, 1/2 white flour (and may try all wheat next time) and did increase the amount of vanilla and cinnamon. I will probably cut the sugar down next time as well - I think with the sweetness of the raisins, about 1/2 cup of so would do fine.

Lite Carrot Cake

We really liked this cake - I did frost it with cream cheese frosting but it would have been great without - or made into muffins. I used apple sauce instead of oil and cut the receipe in half but should have used 2 eggs instead of just 1. Will make again for sure.

Penne with Spicy Vodka Tomato Cream Sauce

I added extra red pepper and garlic as we really like spicy. I did simmer the sauce for 30 min prior to adding the wine and cream. I only had vanilla vodka so I substituted white vine and I didn't have fresh parsley so I used cilantro as someone else had suggested. It was a very flavorful dish, I will definitely make it again. We agree that the sausage was a nice addition, but not necessary. Since there are just 2 of us, and I don't like leftovers, I froze 1/2 the sauce prior to adding the wine and cream and cooked just 1/2 a pound of farfalle.

Ratatouille

This was a fabulous basic receipe - one that would be good with just about anything you decide to add or leave out. I added sweet italian sausage and always put red pepper flakes in my olive oil before I saute anything - which gave the egg plant a very nice flavor. I used plenty of cheese between the layers (ricotta and fresh parm). We enjoyed it with garlic penne and soaked up the delicious sauce with a fresh baguette. I froze the leftovers and can't wait to try them on a flatbread pizza!

Grilled Pork Chops with Balsamic Caramelized Pears

This was a fabulous dinner with a very impressive presentation. I served it with Basmati rice and steamed asparagus. It was asolutely delicious and well worth the 3 step process!!

Key Lime Pie I

This was a wonderful reminder of summer days when we ran into a winter sale on limes and decided to make a pie! We used a frozen pie shell (precooked it as we would have with a cream pie) instead of the graham cracker crust. We used a bit of corn starch instead of the cream of tarter. Also, we kept it in the oven until the crust edges were brown. We did pop it in the freezer, but couldn't wait the full 4 hours. It was absolutely delicious!

Cream of Mushroom Chicken

This was a really good, last minute, forgot to thaw anything recipe! I thawed the chicken breasts in the microwave while I gathered the other ingredients. Instead of butter, I used olive oil and because others had said it was a bit bland, I added a citrus/pepper blend(orange and lemon) to the olive oil along with the onions, fresh garlic and mushrooms. I used no water, and substituted sour cream for the milk. I sprinkled additional citrus pepper prior to serving as it really didn't have any eye appeal. I steamed my vegetables on top of the rice cooker and dinner was done and delicious in a snap!
