Butternut Squash Soup

I prepared this according to the recipe and exact instructions (unlike many reviewers), and thought it was awesome. The only thing I'd be sure to change is to skip the nasty synthetic margarine and use real food...butter. Using a stick blender to smooth the soup is easier and safer than using a food processor.

Great Easy Waffles

Wow! These were great. Let me start by saying that I almost didn't want to make this recipe because of the extra dishes (my "standby" recipe uses just one mixing bowl). The extra effort produced amazing results. I also made some serious blunders. I dropped some yolk into my whites. I also only had 2 1/2 tbsp of butter. Despite this, my end results were still 5 stars! My waffles were crispy on the outside and tender and fluffy on the inside. Did I mention they smelled amazing while cooking?

Seven Layer Taco Dip

I say four stars as is and five stars when prepared like this: increase to 2 cans of beans with 2 packs of taco seasoning. Omit the green bell pepper (just doesn't fit) and lettuce (it wilts too fast). Six ounces, drained weight, of black olives is WAY too many. I'd say that 2 1/4 ounces drained is plenty...and I love olives. Made like this I'd say it's perfect.

Banana Crumb Muffins

My only problem with this recipe was the listed yield. I have oversized muffin tins and it easily made a dozen. As far as taste however, completely outstanding. I added 1tsp of cinnamon to the batter and omitted it from the topping.

Chorizo Breakfast Burritos

Store didn't have chorizo, so I substituted sage ground sausage. I drained is as other reviewers have suggested. I also used a yellow onion, 1/2 c red bell pepper & 1 clove of garlic. Also used a 4 oz can of green chiles, drained and chopped. I liked it :)

Italian Vegetable Soup

Loved this as a low calorie, vegetarian, easy, filling meal. Soups are great to tweak to personal taste. My personal taste is to use 3 carrots and 2 zucchini and 3 cloves of garlic. I also used macaroni alphabet pasta to entice my kids. DO NOT substitute anything for pearl onions, nothing else will do.

Slow Cooker Parsley Chicken

I pretty much like it, but it needs some tweaking, imo. I use only 1/4 c butter and remove the skin from the chicken. It tends to be greasy if you don't. I cut the potatoes bit-sized, just cus that's how I like them. I add 3 cloves of garlic. I also use a whole 8oz box of sliced mushrooms. I like extra gravy too, so I add a cup of homemade chicken broth. I also zest the lemon before I juice it. If using soy sauce, omit salt. I have used liquid aminos as a healthier alternative to soy sauce, but if I do I use the salt the recipe calls for. Adding cream soup is not necessary and adds much extra sodium; not a healthful idea with the sodium content in the soy sauce. I have made this recipe a few times and with these changes it is a family favorite. With these changes, I would give the recipe FIVE stars!!

Chemical Apple Pie (No Apple Apple Pie)

We used this as a science project for our homeschooling family. It was so much fun! For what it is, it's a great recipe. I read many reviewers who said theirs turned out runny. To guard against that, I added 1 tsp of tapioca and allowed to completely cool before slicing. I had nice clean slices. I also used real apple pie spice instead of cinnamon alone.

Slow Cooker Honey Garlic Chicken

I didn't have the pineapple, so I substituted homemade chicken stock for the reserved pineapple juice. I didn't have lite soy sauce and used the rest of the regular soy sauce I had, about 1/4 cup. I love garlic, so I used 6 cloves and halved them for easy removal later. Also used 1 tsp of ground ginger. Although I used so many substitutions, it was really good! I thickened with 4 tbsp cornstarch.

Grilled Salmon I

Didn't have time to marinade, so we brushed it on instead. Made a mess on the aluminum foil that was spread out over the grill grate, but still had a good taste, but not as strong as if it were marinaded. Great compliment to salmon's flavor.

Classic Tapioca Pudding

I was worried it was going to be runny, but it was perfect. It definitely needs a big of salt, but a pinch is plenty. I added 2 extra tablespoons of sugar and 1 tsp of vanilla. Fantastic tapioca pudding recipe.

Vanilla Cherry Ice Cream

I'm a huge cherry vanilla fan. I followed the recipe exactly and it was just not a hit. Almond was too strong, vanilla was not strong enough. Maybe the milk and cream need a vanilla bean simmered with it and not just extract added? It also made this weird film-feeling inside my mouth. The cherries had poor texture with big ice crystals. Maybe maraschino cherries would do better? We threw the rest away and won't be trying it again.

Potato Chips

WOW! I used a red potato sliced to 1/8" on a mandoline. I sprayed the plate with Pam and salted well. Four minutes was plenty of time. I used a Pfaltzgraff stoneware platter in the microwave. I never trust anything made in the microwave, but I needed a chip fix and we were out! These are amazing!

Antipasto Salad

You won't believe how great this is. We made this recipe (in bulk haha) for a baby shower. Everyone raved over it and several people asked for the recipe. If fact, another lady who caters started serving it on her wedding reception menu. After making it by the recipe several times, we started a substitution ---scrap the oil and vinegar and replace with Kraft zesty Italian dressing. It gave fuller flavor and made it a bit more convenient to make.
