Johnny's Biscuits

I truly love my biscuits and I do believe these are the best I've ever made. I had no buttermilk or even whole milk so I used sour cream, half and half, a spoon of vinegar and club soda to make up the buttermilk. I've never eaten a better biscuit for flavor or the softness and lightness of these.

Chicken Alfredo

The recipe is good overall but I think the name could be changed so no one is expecting an 'alfredo' taste. The cream cheese flavour is somewhat too pronounced. A cup of chicken broth, a dash of celery seed, a tiny bit of green pepper and onion sorted that out. I served this over the "Johnny's Biscuits" instead of pasta and it was very tasty. The recipe is very thick if made as directed... too thick for my purposes.

Chicken Gravy

I couldn't salvage this. My suggestions are: do use milk instead of water to dissolve the cornstarch. Do not add more than the smallest amount of poultry seasoning before you TASTE it. Be clear what seasonings are already in your bullion or stock before you add any salt or pepper, spice, etc. For gravy makers, as usual, just add the cold milk/cornstarch in phases until you like the consistency. The consistency is fine. The flavor is not to my standards. If you like the traditional taste of gravy, I do not recommend this one. Yes, this is much easier than pan gravy, but I did not care for it at all.

Mushroom Sauce Baked Pork Chops

I rated this 4 stars because after following the suggestions of everyone else, it was really good. I put the potatoes in the microwave all together first for 8 minutes total. I used only one onion but 2 might have been okay. I sprinkled shredded cheese over the potatoes then added broccoli and corn. I added 1/2 cup of sour cream and 1/2 tsp celery seed to the mixture after I took it off the heat. I used 2 cans of soup and one extra soup can of milk. That was good because it was the right amount of gravy. I sprinkled bread crumbs (Vigo) to the very top of the casserole and then when it was almost done I added 2 slices of bread I had cubed. I broiled it for the last 3 minutes and the croutons added a lot more than I thought to the recipe. The only thing I think is not quite right are the spices. It needs more variety of them. I think a half or full pkg of Lipton herb and garlic soup or one of the pkgs of dry salad dressing might help. Also, maybe a finely diced green pepper and a 4 oz can of pimentos. I agree 100% with the person who said this is a wonderful starter recipe.

Cappuccino Cream Cheese Brownies

You have to like the taste of cinnamon in your brownies. Also, the cook who doesn't make a lot of brownies might not be clear that it's all purpose flour instead of self rising or that the choc mix must be slightly cooled before adding to anything with eggs. It does need to chill overnight to have the best flavor also. I make other recipes I like better. This one's not bad but not my favorite either.

Oklahoma Brisket

Definitely 5 Stars!! Tender and flavorful. Wonderful and delicious in every way. I don't grill so I used the oven broiler on low for about 10 minutes for that part. My brisket was only 2 3/4 pounds and it still took 2 1/2 hours to cook to "fork tender". The BBQ sauce is good. If you have some other kind you like, it wouldn't matter which you used. Actually, the feedback I got was that it was not necessary at all. It's perfect without it, if you're in a hurry. If you don't cook brisket much, I suggest make sure the liquid (apple juice in this case) comes not less than 50% up the sides of the meat. When you think it could be done, (I first check after about 45 minutes per pound of brisket) stick a big fork in it and if it goes through easily, it's time. Thank you for a wonderful recipe!

Pudding Cookies I

Edible but I wouldn't make these again. I made exactly as shown and they are very bland. Bland as in very similar to eating choc chips out of the bag. Also, the instant pudding left a slightly acrid aftertaste after eating 2 cookies. If I were going to do this again, I would add about a 1/2 tsp of vanilla, a couple spoons of sugar and sift some confectioners sugar on the tops after baking. Such a lovely idea being so quick and so few ingredients but sadly, not a keeper.

Cream Cheese Pie

I love this cheesecake. It's easy to make and very good. Not as dense as the New York style but still delicious. I did add choc chips to the batter. Also I added instant espresso granules (dissolved)and a bare dash of cinnamon to the sour cream layer to add a cappucino flavor to it.

Hot Fudge Pudding Cake I

The cake part is fine. The pudding result is missing some important ingredient. It's still good but I'd look for something different next time. Or try to add maybe a spoon of instant coffee granules to the boiling water? I think I was looking for an Applebee's tasting pudding cake. (Triple Chocolate Meltdown).

Congo Bars I

I like the taste BUT the middle never did completely set up. I baked at 330 degrees for 35 minutes and 350 for 10 minutes in a 9 x 13 pan. They are definitely sweet!

Chocolate Sauce

Perfect! Tastes pretty much like Hershey's. The only reason I didn't give it 5 stars is that I did use 1 c. milk and 1/4 c. corn syrup instead of the water like the other reviewers. I also cooked it at just below boiling for 5 minutes to get all the sugar well dissolved. I adore this recipe.

Chocolate Fudge Cupcakes

Very chocolately, my favorite kind! At first I wondered, when the dough was almost as thick and stiff as peanut butter, but I just spooned it in the tin anyway. I did use unsweetened chocolate squares instead of semi-sweet since that's all I had. They came out perfect and didn't collapse or any other bad thing. I did follow very carefully all the "mix on low", "sift the flour" instructions since I was worried after reading some other reviews. It made 12 delicious, oversized muffins for me. Heating the chocolate and butter is a lot easier in the microwave.

Sock it to Me Cake III

I was looking for the original Sock It To Me Cake I used to make from the side of the cake mix box. This one is close (and very good) but it's missing something flavor wise - a tiny bit bland in some way. After some research on the original recipe, I think I'll add the 2 tsp vanilla to it next time. Also, less white sugar. It's a bit too sweet, even for my sweet tooth, after all the brown sugar.

Favorite Peanut Butter Cookies

These are a lighter, airy version of peanut butter cookies. Almost a shortbread hydbrid with a fainter peanut butter taste. I like the denser, more peanut buttery tasting variety.

Heavenly Chocolate Mousse

Heavenly is right! Very heavy chocolate flavor. I did use coffee instead of the water when melting the chocolate and added a tsp vanilla and some unflavored gelatin to the whipped topping part, as suggested by others. As if this wasn't decadent enough, I added in skor's pieces and then served this layered over kahlua soaked fudge brownies, topped with whipped cream and sprinkles of heath bits on top of it all. Added this mousse to my personal death by chocolate collection! Lukewarm bath water is about 105 deg. 160 deg (in my make do way) is when you skick your finger in it and you aren't burnt but you want to pull it out right away. It worked out just fine and took about 5 or 7 minutes.

Chocolate Peanut Butter Pie

I only gave this a 2 since I wouldn't make it again. It has definite possibiities but needs too much work for my personal taste. It's easier to begin with something I like better to start with. To make the peanut butter layer better, I added some whipped topping but it ate the peanut butter flavor completely up. Also, there should be twice as much pudding and half as much peanut butter in the layer proportions. I love sweet desserts, but even 2 cups of conf. sugar was a little too much. Maybe 1 3/4 would be the right amount.

Chocolate Cheesecake I

I really liked this one. I did add about 2 TBSP cocoa which meant extra 1/3 c sugar, too. I wanted it to be thoroughly chocolatey. I added a bit of coffee liguor and cinnamon too since I like a little bit of cappuccino flavor. And I think a little coffee brings out more chocolate flavor; never a bad thing in my kitchen! I scaled the recipe to 8 servings but it still was a tiny bit much for a normal 9" chocolate oreo pie crust, that I cooked it in. Deep dish would have been perfect with 8 servings.

Frosted Walnut Brownie Pie

Turned out really well. Substituted coffee liguor for the vanilla, added a little cinnamon and 1 sqare of melted chocolate to the batter. I couldn't fill the deep dish pie crust I had with 7 servings so I did add a raspberry chocolate truffle layer to the top instead of the frosting used here.

Homemade Chicken Fettuccine

This was really tasty. I added spices after reading some reviews and a little bit of corn starch. It still was not very thick (after 25 min cooking) until it sat awhile afterwards. Also, it would have been helpful if Torrerizor had added cooking temperatures. I suspect they are a very good cook and never thought of it.

Chocolate Butterscotch Squares

A quick alternative to layer bars. Graham crumbs and condensed milk are a little bland. I added a tsp of vanilla. Next time I'll add a sq of melted chocolate, too. I sprinkled a little coconut on top and I liked that addition. This is such a quick dessert and an excellent base for whatever you like to add. The mix was VERY stiff to 'press' into a pan. But it was worth it.
