Simple Chicken Brine

I've brined a few chickens and turkeys, and before you cook it, YOU NEED TO RINSE IT. Then your bird won't be too salty.

these were perfect and fast, my only change would be to use a 9x9 dish, for a thicker more sturdy crust and thicker custard layer.

Iced Pumpkin Cookies

i followed the recipe exactly, and they are perfect. just a tip, dont make the icing too runny! its prettier when its thicker and it wont get everywhere. also, they dont spread when they bake so go ahead and load up your cookie sheet, i made a double batch.

Butternut Squash Supreme

i was looking for an alternative to mashed potatoes... trying to trick my 2 year old into eating vegetables, more like... and this is wonderful. first time i made it i sauteed the onions first (as suggested), the second time i didnt have time to do it but it turned out fine. i like to spread it out in a casserole dish and get happy with the cracker crumbs!

Country Pumpkin Muffins

triumph! they're good as the recipe is, but i tweaked it the second time around: i used 1/2 c. cinnamon applesauce (it was all i had) in place of oil, 2 c. whole wheat flour and 1 c. all purpose flour, 3/4 c. white sugar and 3/4 c. brown sugar (i reduced to make up for the sweetened applesauce) and increased the raisins. they're still nice and moist, and now healthier!

The Best Unbaked Cherry Cheesecake Ever

pretty good, super easy (my husband could make it without burning the house down). i had an abundance of nilla wafers, so i used them for the crust and left out the sugar, good way to cut back.
