Hudson's Baked Tilapia with Dill Sauce

This was the first time I've tried tilapia and I didn't care for the fish itself, however, I liked this recipe and the dill sauce was great. I used the Creole Seasoning recipe from this site to season the fish. I served it with rice, which I cooked in chicken broth and seasoned with Epicure's sundried tomato seasoning. The next time I make this I will use sole or haddock instead of tilapia.

Best Tuna Casserole

Hamburger Vegetable Soup

I'm giving this 5 stars because it was very tasty, easy to make, and I had all the ingredients on hand. I did everything exactly as the recipe stated, except I always cook my noodles separately and store separately in the fridge. This way, if there are leftovers, the noodles don't sit in the soup overnight and become mushy.

Cajun Chicken Pasta

This was very good. I used shrimp instead of chicken, and I seasoned them with the following cajun seasoning recipe: 4 tsp. salt, 4 tsp. paprika, 3 tsp. garlic powder, 3 tsp. fresh ground pepper, 2 1/2 tsp. onion powder, 1 1/2 tsp. cayenne pepper, 1 1/2 tsp. dried thyme, 1 1/2 tsp. dried oregano. Also, I used half and half instead of the heavy cream.

Jo Jo Potatoes

I guess my rating doesn't truly reflect this recipe as I tweaked it quite a bit...I didn't want to deep fry the potatoes so I substituted about 2 or 3 TBS Shake N Bake Southern Fried coating mix for the flour, and I used 1/4 tsp. pepper instead of 3/4 tsp. lemon pepper. I microwaved the wedges for 1 minute, then added all the seasonings, and then baked them in the oven on 450 degrees for about 20 min. on a greased cookie sheet with melted butter drizzled on top. They came out perfectly crunchy on the outside and moist on the inside. After reading several reviews where people thought these were lacking in flavour due to the flour, I think the Shake N Bake was a good choice.

Grilled Marinated Shrimp

Absolutely delicious! I cooked angel hair pasta and put butter and a few sprinkles of Mrs. Dash on that, then put the shrimp on top and it was awesome! I served it with asparagus on the side. The only thing I'd do differently next time is add a bit less salt.

Fettuccine with Sweet Pepper-Cayenne Sauce

This was great... My whole family loved it! I took the advice of some reviewers and only used 1/2 c. chicken broth and it was nice and creamy. I used a little less than 1/4 tsp. cayenne pepper and it was hot enough for us.

Sweet and Sour Meatballs I

It doesn't get much easier than this, and it was very good. I cut the recipe in half because I was only using 1 lb of ground beef. The sauce was quite tangy so I added a little extra grape jelly, as my husband prefers more sweet than sour. He and the kids liked these a lot. For the meatballs, I made my own using 1 lb ground beef, 1 egg, 1/4 c bread crumbs, 3/4 tsp seasoned salt, 1/4 tsp garlic powder and 1 TBS dried onion flakes.

Quick and Easy Chicken Noodle Soup

This was a really good soup...the only thing I did differently was saute a clove of garlic along with the onions, celery and carrots. This meal was on the table in about 40 minutes, although I was in a rush and I didn't let the soup simmer for 20 minutes. I will definately make this again when I'm in a hurry!

This was so easy and delicious! I used pork stew meat instead of the tenderloin because it cost less and it still turned out tender...I added fresh mushrooms and I marinated it overnight...it smelled so good on the BBQ the next day! I just served it with plain white rice.
