Italian Cream Cheese and Ricotta Cheesecake
Very light and not too sweet. I cut the recipe in half and put it inside a graham crust. I used palm sugar instead of white, and it gave it a nice, almost mocha flavor. I will be making it again!

Campbell's(R) Easy Chicken and Cheese Enchiladas
These were easy and so good! I used havarti with jalapeno instead of monterey jack and Tostitos salsa instead of Pace picante.

Marty's Thai Chicken Satay
I didn't have lemongrass so I used the powder and palm sugar in place of muscovado...this was delicious!
