Baked Garlic Parmesan Chicken

Eh. Just OK. I think I will go back to frying my parmesan chicken. It was not crispy or terribly flavorful. I don't think it is a huge benefit nutritionally to bake it, as you still use olive oil in the recipe. The family ate it but no rave reviews here.

Joey's Peanut Butter Cookies

My family went NUTS for these cookies. Left out the milk and dough was plenty soft and moist. Used crunchy peanut butter. Less flour and butter than in other recipes made for a really rich PB cookie!

Jimmy Dean Hearty Sausage Mini Quiches

Really good! I just made these and used half the sausage. They were perfect. Rather than mixing everything together, I sprayed my muffin tin with Pam, put the sausage/veg/cheese mixture in the tins evenly and then poured the egg mixture in, evenly. Popped right out of the pan, delish!

Butter Rich Spritz Butter Cookies

I've made this recipe for years and it is so delicious! I reread the reviews before I made them today and I added 2 Tbsp. butter as a reviewer suggested and it made such a difference. It is a stiffer dough but this made it perfect! I also add 1 tsp. almond, 1 tsp. vanilla, our preference. SO good and easy!

Mexican Wedding Cookies (Polvorones)

This is my all-time favorite Christmas cookie recipe. But real butter is the only way to go. And use pecans. Carefully roll the delicate cookies in a ziploc filled with powdered sugar when they are warm. A second dip is always nice too because sometimes the sugar kinda soaks in the first time around. Melt in your mouth delish!

Spring Biscotti

A fave, very similar to my recipe. Mine calls for currants rather than cranberries and it is fabulous. So delicious, always asked for and devoured! After the initial bake time, I bake them for 15 mins, on their sides, flip them and bake them again. They have to be crunchy!

Italian Sausage Soup

I found this recipe last winter and loved it. Have already made it this fall. I use a mix of spicey and sweet sausage and let it simmer for a couple of hours. One pkg. of froz. spinach is perfect. Delicious flavor! Also, I add a half cup of orzo shortly before serving. Serve with shredded mozz. and crusty bread....amazing!

Roast Sticky Chicken-Rotisserie Style

While this chicken was realllly moist, it wasn't sticky or very flavorful. Maybe if I had put the rub under the skin it might have had more flavor. I marinated it over nite and I still don't think it was as good as a store-bought rotisserie chicken.

Creamy Au Gratin Potatoes

I made this for x-mas. Followed recommendations of many others. Sliced about 4 lbs. of potatoes (dbl. what the recipe called for) and doubled the sauce - there was PLENTY. Used sharp cheddar (a must). Added the chopped onion and garlic powder. The dish was a hit!

Bacon and Tomato Cups

I wasn't thrilled with this recipe. I cut the mayo way down and still thought it was too much - I would omit completely. I did try it with biscuits - do cut into 3 for a less doughy cup. And I tried it with the phyllo to - it was ok. Can't say I will make this again.
