A Pad Thai Worth Making

This is my go-to recipe for Pad Thai although I've made a couple of minor adjustments. The noodles need to soak longer than 20 minutes or you will end up with chewy, stuck together noodles. I pour boiling water over them and let them set 30-40 minutes. I do not use white sugar. It does not help at all. Use 2 tbsp brown instead and if it's still too salty for you (the fish sauce is super salty) add more and maybe more oyster sauce. The recipe says to divide the chili paste but never says where to add it in after the 2 tbsp to the sauce. I like mine spicy so I add it all in to the sauce. Family love this one!

Spicy Thai Peanut Sauce

Another fabulous sauce. I have to rate this top o' the charts when it comes to peanut sauce. Another recipe I could bathe in. Very good. Thanks for submitting it Genevieve.

Fish Tacos

I've been making fish tacos for years but thought I'd try a new recipe. While I'll probably go back to my other recipe (easier) I will keep the sauce from this one. It totally makes the fish taco experience.

Thai Spicy Basil Chicken Fried Rice

This has become a favorite. Easy to make and super good. I substitute the white sugar for 2 tbsp brown, it gives it more of a Thai taste, and substitute the serrano peppers for 1-2 tbsp chili paste (Oelek) but you could use more or less depending on your taste for spice. I just use Minute Rice but make it the night before. It's VERY important that the rice is cold when it goes in. Thanks ErinInVegas, this is super good stuff.

Peanut Butter Noodles

Proceed with caution. While I'm not a huge fan of Udon noodles (too thick for me) the sauce on this was to. die. for. I just wanted to drink it. I made it just as it is but could see using this a number of ways. While the sauce is pretty thin at first, give it ~5-10 minutes and you'll be happier. Delish!

Coconut Cream Cake I

Oh My Goodness! This cake is incredible. I used the recipe as is and while it was a bit soupy, it was still fabulous. Made it for a bridal shower and had everyone asking for the recipe. YUM!!

Chicken and Pumpkin Lasagna

This was really good. I had to use butternut squash soup but it turned out wonderful. Next time, I would not use the water and the soup as it was a bit runny. Definitely helps to let it set.
