Baked Penne with Italian Sausage

I used brown rice pasta (16oz) which worked great, only boiled them for about 6min. I used coconut oil to saute the onions and I also added a couple cloves minced garlic to that; my sausage was actually Chicken Addouille from Costco) which worked great, I just cut up 4 sausage links. I used white cooking wine. Added some "21 seasoning salute" and oregano and basil to the sauce for some extra flavor. We also didn't have mozzarella so I used some raw aged cheddar and some colby/jack. Turned out YUMMY! Definitely will make again!

Chicken Stir-Fry

Very yummy! I used 3 tbsp of soy sauce (lite w/ less sodium), 1tsp freeze-dried garlic instead of garlic powder and added maybe a tsp of hot chili sauce to the mixture that went in with the chicken. For veggies I used fresh carrots and celery that I needed to use up and then added about a cup of frozen broccoli, a 1/2 cup frozen grilled bell peppers (love Target!!), and 1/2 cup frozen pineapple chunks (love Trader Joes!). Later when I added the water and boullion, it needed a little more (1 tsp) cornstarch to thicken and then I added about 1 tbsp brown sugar and a couple more splashes of soysauce. Served it over brown rice and boy was it YUMMY!!

Pork, Apple, and Ginger Stir-Fry with Hoisin Sauce

This was pretty, my husband loved it! Next time I'll probably use a little less of the oils (or just stick with olive oil) and maybe nix the cornstarch. When I made it, I used only 4 T. of the soy sauce because 6 seemed like so much, and it tasted fine. Still had plenty of saltiness to it. I served it over some white jasmine rice. Tasty!
