Creamy Chicken Rice Soup

This was delicious! The lemon juice and white wine really make the flavor. I used lemon juice from concentrate and it worked great. I only make soup in huge amounts for leftovers, so I left the rice out of the soup and poured the soup over rice. I also doubled the recipe and used 1/2 of the chicken called for. We like chicken shredded rather than cubed. It worked great and this is a definite keeper! I can only give 4 stars since I did adjust the recipe.

Grandma's Egg Custard Pie

I'm not a big custard fan, but my family loved it. The egg white on the crust really kept it from getting soggy. I'll try that on my other custard-type pies too.

Fresh Pear Pie

I was worried about that high temp, but it worked beautifully! This pie is amazing! I've made 3 pies so far; using different types of pears with different ripeness, from rock hard to very soft. They all turned out great, but the ripe pears are definitely the best. If you bake the pie a bit longer, maybe 5-10 minutes for the hard pears with foil over the top, it turns out really nice.

Baked Cream Corn

The flavor was good, but it seemed very uncooked. I even added 6 Tbs. flour like suggested, and baked for 1 hour til nice and browned on top, but it was too gooey for my taste. I might tweak it some more by adding 1/2 c. flour and some corn meal. Maybe less butter too.

Slow-Cooker Chicken Tortilla Soup

Yum! I added a can of rinsed black beans and sprinkled cheddar on top and it was delicious! Not too spicy - my DH added hot sauce to his liking. My 2 year old liked it too. Next time I'll cut my tortillas thinner and probably double the amount.

Lemon Chewy Crisps

The name says it all. They are good hot out of the oven, or out of the fridge. My DH likes soft cookies, so I tried to bake them less, but it didn't work - they looked done until they cooled, but they were still doughy. I just used the zest and juice of one large lemon, and they were delicious. Not the lemony zip from a lemon bar, but nice subtle, refreshing lemon flavor.

Chicken Noodle Casserole

This was really yummy, but it neede more veggies - maybe green beans or broccoli. The cheese taste is very mellow so if you are looking for something super cheesy, this ain't it. Definitely making it again.

Yes to chocolately, yes to quick - no to texture, no to flavor. I prefer the bake in the oven cookies. I'd rather clean a cookie sheet than a pot too.

Gobble Up Granola Snacks

Very versatile. We used all honey, doubled the peanut butter, and added 1/2 oz. of baker's chocolate. We added the peanut butter mixture to the cereals and mixed, then rolled it into balls. We call them meatball cookies, which the kids really like.

Gingerbread Cookies

I made a gingerbread house out of this. It made nice thick, soft walls and tasted great. I love that it has no dairy, so the kids can eat the house 2 weeks later. Instead of the frosting, I used 2 egg whites and 5 cups powdered sugar for the 'mortar' of the house. It made clay-like icing that I rolled into ropes to hold the sides together. I wouldn't decorate with it, since it is too thick to pipe, but it is great for holding the house together, and especially good for kids because it isn't sticky at all, but more like clay.

Caramel Apple Pie II

The apples didn't cook enough, and it was way too sweet for our taste - some of my guests said it was the best apple pie they ever had, but I would say it is similar to a chain restaurant dessert - overly sweet and decadent. If you like that sort of thing, then this is a great pie for you. Make sure to put a pan under it when you bake it, even if you think the crust is completely sealed.

Master Cookie Mix

I didn't bake these; just gave them as gifts. I used half of the choc. chips and layered the chips - 2/3 c. of each for each jar. Since the chips weren't combined with the other ingredients, I couldn't fit the chips called for in the recipe in the jars anyway. They turned out beautiful.

Thick Cut-Outs

Wow! Incredibly soft and foolproof! Last year was my first time making sugar cutouts and I had a really hard time with the recipe I used. This recipe is sooo much better, great instructions, easy to mix, roll out, cut out, and great without any frosting.

Creamy Cheesecake

I didn't use any zest, but this is the best tasting, easy cheesecake I've seen. It is so smooth and creamy, and just as tasty as NY style without the huge quantity and expense. Perfect for our family.
