Alex's Raw Chocolate Pudding

Excellent! It tasted so good out of the blender, I couldn't wait a full hour to chill it, but I managed to have enough self-control to stick it in the freezer for 15 minutes. What a delicious, easy dessert. We all loved it! For those who have complained, I would recommend using an avocado and banana that are at peak ripeness for raw eating - no black spots.

Chicken and Cashews

made this as written, with tofu instead of chicken - not too exciting, but quick and easy. Other additions like ginger and veggies would probably help. Cooked the sauce down about 5-7 minutes with a 4 serving recipe - but the tofu probably added some liquid.

Thai Curry Tofu

This would probably be good for a beginner cook or college student who isn't too familiar with the more exotic spices and flavors. It lacked depth. Maybe with some ginger, basil, lime, coriander...Probably won't make this again though.

Greek Goddess Pasta Salad

I made this with 16 oz rotini and no avocado or dressing. I used some of the oil from the various jarred items to moisten the noodles and added grated zucchini and carrot. It was very flavorful and fresh tasting, not soggy or oily like I might imagine this would be with so much dressing added to it. The flavors worked nicely together.

Butter Chickpea Curry

This is more like a masala than a curry, I think, but it was delicious! I subbed 8 oz. tomato sauce for the cond. soup, and coconut milk for the cream. Not too spicy, so the kids could handle it. Definitely making this again!

Michael's Foccacia Bread

As others stated, too much salt on top. I think I won't use any on top - the bread has enough in it. I did a half recipe and baked it in a 9x13 pan. The bread was about 1 1/2-2 inches tall, perfect for sandwiches. I used 1/2 an onion in the bread, and it was so good! So easy to prepare. I also let it rise for 1 hour, although my yeast was cold. Definite keeper.

Pumpkin Tart With Pecan Crust

Delicious! I didn't have oats, so I used all w.w. pastry flour. The middle was a bit too gooey for my taste. The outer inch was the perfect consistency. Next time I think I'll cook it at 350, and cook it until there's about a quarter-size underdone center, like I do for regular pies. I also subbed 1 tsp. ground ginger for fresh. I prefer the BH&G pumpkin pie spices - 1 tsp. cinnamon, 1/2 tsp. ginger, and 1/4 tsp. nutmeg. Very glad to have a tofu-free vegan recipe. Thanks for sharing!

Wild Rice Stuffed Acorn Squash

Very good - the directions are definitely backwards - 1) start the rice first (I added celery and carrot), 2) then do the stuffing (on the stove top), 3) then bake the squash. I think the squash needed a salt rub before baking - it was pretty bland. My kids weren't big fans of the squash, so next time I will not stuff them, but cut them into cubes and toss them in with the stuffing and rice before baking. I ended up making only 2 squash, and did the full stuffing/rice recipe, and the extra stuffing filled up a pie pan nicely, and gave the kids a better stuffing to squash ratio.

Bean and Kale Ragu

Excellent introduction to kale. I added 1 cup of leftover barley and used 1/2 red bell pepper instead of canned chili peppers. My family polished off the whole thing! Next time I'll tweak it to cook the barley with the kale for extra flavor.

Made Me Love Pumpkin Cake

I used 1 cup honey instead of sugars, 1/2 cup extra pumpkin instead of butter, and doubled the spices. It rose beautifully, was moist, well-spiced, and gone in 5 minutes! Thank you for a recipe I could easily make egg and dairy free without anyone knowing!

Loved it! Used quinoa instead of bulgar wheat, and 1/2 parsley 1/2 mint, with a little cucumber added, red onion, and red bell pepper instead. Next time I'll probably use all mint.

My carrot cake recipe is better - I think I'll just try subbing the sugar with honey. For the frosting, DO NOT use lowfat cream cheese - it's like glue.
