Broiled Tilapia Parmesan

Absolutely delicious. I added some breadcrumbs to the butter and cheese mixture, which gave it a nice texture. Better than any I've had in restaurants.

Baked Ziti Casserole

i tweaked this a bit--used homemade marina instead of jarred sauce, part-skim ricotta, and whole wheat pasta. Let it stand for a few minutes when it comes out of the oven, so the pasta can absorb the bubbling sauce. Very simple recipe and really tasty!

Michelle's Famous Washed Cranberry Sauce

This was perfect for Thanksgiving. I doubled the recipe and used half water and half OJ. Important to skim all of the foam off, which is easy enough to do when it's boiling. Will definitely make again, it's delicious!

Orange Cranberry Drops

These are fabulous! Don't skimp on any of the orange ingedients--I even used a little extra zest. And I also splurged on the dried cranberries from the produce department, which really seemed to make a difference. I doubled the recipe to and got about 40 nice sized cookies. Used them in a cookie exchange, everyone thought at first glance that they were chocolate chip, but were very surpised once they tasted them. And everyone asked for the recipe! These are going to be a Christmas tradition from now on!

Baked Oatmeal II

I really enjoyed this. I used Splenda brown sugar (1/2 cup) and probably could have cut back a bit. I'd also cut back on the cinnamon a bit. The cranberries made it delicious, and I added some chopped walnuts (very fine chop, mixed some in and sprinkled some on top) which gave it a nice crunch. Serve it warm in a bowl with a little milk!

The Most Delicious Green Beans

I used frozen beans, and it was still very good, although I want to try it with fresh. I cut the bacon into smaller, bit-sized pieces, and then as other reviews suggested fried the onions in the bacon fat, which made them really delicious. The tang of the vinegar was great!

Winter Fruit Salad with Lemon Poppyseed Dressing

Delicious and unique salad. Freshly squeezed lemon juice made the dressing wonderful, but I only pured about 2/3 of it on the salad and it was plenty. Served this with Christmas dinner and everyone loved it!

Pudding No-Bake Oatmeal Cookies

These are super sweet. Very easy, a good summer cookie because you only need the microwave. My 6 year old daughter and I made them and she loved the fact that she could do pretty much everything herself. We used chocolate fudge pudding and they are nearly as good as brownies!

Watermelon Summer Salad

This is absolutely delicious! I used kalamata olives, which were great. I also soaked the onions for about 30 minutes--I don't normally like raw onions but they were great. And the mint is critical--I considered leaving it out, but ended up making a special trip to the store to get it, and I'm glad I did because it made all the difference. Try this!!

Awesome Pasta Salad

This is a great pasta salad because it has things that just about everyone likes. I added zucchini, a red bell pepper, and some fresh mozarella, and i only used a small can of sliced black olives. I put about 8 oz of Italian dressing on the night before [Newman's family-style italian, our favorite] then another 8oz right before serving. Great recipe!

Broiled Scallops

Absolutely delicious! I used garlic powder instead of garlic salt. I also melted my butter and then added the lemon juice and garlic powder to it and adjusted the amounts to suit my taste. Then I dipped the scallops in the melted butter before putting them under the broiler, and i turned them over about halfway through. The butter mixture that was around them on the pan got nice and brown and was delicious poured over the finished scallops. Yummy--definitely as good as any restaurant!

Beef Stew with Dumplings

Very good and very easy. Nice too because you don't need beef broth. I seasoned the flour before coating the beef cubes, and next time I'd add a bit more garlic and double the mushrooms. Yummy!
