Greek Lemon Cake

I was looking for a simple, tasty and moist lemon cake recipe...and this was not it! I thought I'd try it since most of the previous reviews were so good, but as a seasoned baker I was very disappointed. I did not get any compliments on it from my family who usually love whatever dessert I make. Like some of the reviews before, I agree this is not a moist cake. It also did not have enough lemon flavor...the lemon rind and juice should probably be doubled.

Pumpernickel Bread II

This recipe is okay, but not good enough for me to make it again. Lacked a bit in flavor and texture. Also, it definitely needs to bake for about 40 minutes, not 25 to 30.

Carrot Raisin Salad

A nice, basic recipe that I would make a few adjustments to. Next time I would cut the plain yogurt down to 1/4 cup, the mayo down to 1 tablespoon and make the cinnamon optional.

Indian Tandoori Chicken

Great recipe! Very easy to make. I followed the recipe as written, but omitted the food coloring since the thought of dyed meat sort of weirded me out. Anyway, I served it with saffron rice and everyone loved it, even my 3-year-old.

Easy Chicken Satay

Great Recipe! I did double the marinade and chicken since this recipe makes so much peanut sauce. I used about 24 chicken tenders and 12 skewers...came out just about right. Otherwise, you can freeze the excess sauce. Everyone loved it...even my little boy who hasn't been interested in eating chicken for a long time! A family favorite now.

Fast and Friendly Meatballs

I was looking for a meatball recipe to "knock my socks off," but this was not it. First of all, I had a hard time finding ground turkey that was 7% fat. Had to use 5% instead. Then it just didn't have as much flavor as I had hoped, even though I added 2 Tbsp. Parmesan cheese, 2 cloves minced garlic, some extra Italian herbs, salt and black pepper. My husband thought it was just so-so. My son ate all his pasta, but only 2 bites of meatball...unusual. I might try to make it again, but will definitely use lean ground beef instead of turkey.

Super Easy Chocolate Cupcakes

This recipe was just what I was looking for. I needed a tasty, moist chocolate cupcake to serve to kids and adults at my son's 4th birthday party. What a huge hit! And I didn't even frost them, just served with vanilla ice cream. I followed the recipe exactly, except omitted the cayenne...wasn't sure the little ones would like it. Next time I'll add the cayenne back in. Thanks for a great and, yes, "Super Easy" recipe!

Carol's Chicken Salad

A great basic chicken salad recipe! I did make a few modifications, however..like omitting the poultry seasoning because my family doesn't like it. I also omitted the onion powder since I didn't have any on-hand. I also used shredded Parmesan instead of the Swiss cheese because that's what I had on-hand. I didn't have time to cook some chicken up, so I used two 12.5-ounce cans of chicken breast packed in water (Kirkland/COSTCO brand), drained. It still came out absolutely wonderful! We all gobbled it up...Thanks!

Feta Chicken Salad

Excellent recipe...thanks! The only changes I made were to use 1/2 cup diced red onion instead of 1/2 of an onion...a half of my onion would have been about 1 cup (too much). I also added 3/4 cup slivered almonds which was nice. Very easy to make and my family loved it sandwich-style in pita bread pockets with cucumber and tomato slices.

Tres Leches (Milk Cake)

A nice, basic Tres Leches Cake, but not outstanding like the one I had from the Mexican pastelria. Better with the suggestions that other reviewers have made, like using 1 cup milk instead of 2 and cutting way down on the sugar for the whipped cream frosting. We really liked it best when the middle was filled with raspberry preserves...don't know if that's traditional, though. Also, there are not 4 types of milk in this cake, only 3...heavy cream is not considered a "milk" since there is no protein in it.

Coconut Shrimp I

This recipe is awesome! My family just raved about it. Served with jalapeno jelly thinned out with just a little water for a dipping sauce...my family liked this even better than the marmalade & horseradish sauce described previously (though that is very good too). Would also be nice with a Thai-style plum sauce, I imagine. I did make the following adjustments, however: increased the batter flour to 3/4 cup (a bit too runny otherwise); added 1/2 tsp salt to the batter; added 1 Tbsp sugar to the batter (since I used unsweetened coconut); increased the dredging flour to 1/2 cup; and increased the shrimp count to 40-42. I used half a bag of cooked, tails-on shrimp from COSTCO and had plenty of batter and coconut for this. Will definitely be making this recipe again and again!

Quick Black Forest Cake

I was a bit reluctant at first about this recipe, since I'm a total "from scratch" kind of gal. However, my family and I were very pleased with the results...this cake is super moist and delicious! And I made it exactly as written, no modifications. Great served with vanilla ice cream!

Banana Coconut Loaf

Very tasty and a nice alternative to regular banana bread, but I'd make a few changes next time. I'd cut the sugar down to 3/4 cup, cut the almond extract down to 1/4 teaspoon, use unsweetened coconut, use pecans or macademia nuts, and replace the maraschino cherries with either pineapple chunks or dried cranberries that have been presoaked. Also, this loaf didn't rise at all after baking...not like I was expecting. This didn't bother me at first, but then it even sank a little after cooling. Will still make again with modificaitons, though.

Chocolate Crinkle Cookies

We used to make these as kids, and this recipe was just what I was looking for! I did make a few modifications, though. I reduced the white sugar to 3/4 cup; omitted the chocolate chips and added 1/4 cup unsweetened cocoa powder to the flour mixture instead; and then added 1/2 teaspoon instant espresso coffee powder to the flour mixture as well. I chilled the dough for 2 hours, but would refrigerate for more like 4 hours next time. They came out great and my family wanted more...Thanks for a great recipe!

WUNDERBAR! We loved this recipe. I did cut the sugar down to 1/2 cup, added an extra cinnamon stick, the juice of 1 lemon, and then strained the whole thing before serving. Made it with a simple Burgandy wine...I bet a Pinot Noir or Beaujolias would be good too. It was even better the second day after the flavors had blended more.

Fresh Cranberry Spiced Tea

A wonderful change from mulled apple cider! I basically followed the recipe exactly, except added an extra cinnamon stick. Fresh squeezed orange juice is a big plus. Don't forget to stain off the spices at the end before serving.

Italian Breaded Pork Chops

I was very excited to try this recipe since it had so many good reviews, but it did not really deliver. I had far too much egg & milk mixture and parmesan & bread crumb mixture left over...half would have been more than plenty. Then there was too much olive oil. As a result, the pork chops came out soggy after being in the oven. Next time, if I ever make this again, I will definitely cut the oil in half as well. Could have used a little salt and black pepper to season it up a bit more too.
