Simple Roasted Butternut Squash

Eggplant Parmesan II

I cut this in half, but used two egg (beaters) and only one eggplant. As other reviewers suggested, I "sweated" the eggplant slices first and baked them for 10 minutes on each side, rather than five. This was my first time cooking eggplant, and it was easy and delicious!

Shortcut Minestrone

I've made this recipe several times; it's easy and delicious! I make it vegetarian by omitting the bacon and using vegetable broth instead of beef broth.

Carrot Muffins

Except for the fact that I cut the recipe in half to make only a dozen muffins, I followed the recipe exactly, and the came out great. However, mine only took about 15 minutes to bake instead of 20-25. They were very moist, and good served warm with a little butter. I would definitely make these again.

Blueberry Oatmeal Scones

I decreased the milk to about 1/2 cup, and probably could have used a little less. I also added a little cinnamon and sugar to the top. This recipe is delicious, and I would definitely make it again!

Lemon Blueberry Drop Scones

I didn't use the lemon peel in the scones since I didn't have any, but these were still great! I made mine pretty large, so I might either make them smaller next time or decrease the oven temp a little since they started to brown a little before they were cooked all the way through. I didn't make the glaze either, and they were fine without it; very moist.

Chocolate Peanut Butter Bars II

I used milk chocolate chips instead of the semisweet since that's all I had, and they turned out great! They were easy to make, but I will try the tip that someone else suggested to cut them (lining the pan with wax paper and then pulling them out and using a pizza cutter) next time because they are difficult to cut.
