Incredibly Easy Chicken and Noodles

Reviewed: Feb. 2, 2010
Did not use cream of mushroom. Added one can of broth. Used pot pie/dumpling noodles that I cooked in the broth. Mixed all the other ingredients and added that to the noodles/broth. I also added a small bag of peas with carrots. Too easy. Nice comfort food over mashed potatoes on a cold day here in Ohio.

Chipotle Marinated Grilled Chicken

Reviewed: Oct. 11, 2009
This was really good. I used boneless skinless breasts & I also added just a little more honey to the marinade but those were the only changes. I also sauteed some zuchinni and red peppers and finished them with a raspberry chipotle sauce (from Sam's). I plated the veggies and then placed the chicken on top and Mmmm was it ever a flavor sensation! Served with oven baked sweet potato fries with a chipotle sour cream sauce. Thanks so much for sharing.

Sweet, Sticky and Spicy Chicken

Reviewed: Aug. 30, 2009
The was absolutely delicious! Alterations are as follows: Doubled the sauce. Cut chicken tenders into bite size chunks. Tossed in cornstarch. Fried just until golden and removed. Used a new pan to mix sauce ingredients, sustituting only ground ginger (2 tsp. for doubled recipe) and Szechwan Chili Sauce for the hot sauce (1 heaping Tbsp for doubled recipe). Added the chicken and brought to a boil and simmered till sauce thickened, 2-3 mins. Thin red pepper strips and water chestnuts were added in with the chicken. Steamed broccoli and Basmati rice on side, drizzled with the sauce. Awesome.

Apple Crisp II

Reviewed: Jun. 22, 2009
This will be my apple crisp recipe from now on. It is soooo good. Read a lot of reviews and ended up with these simple alterations. I skipped the water (although how could a little more goop be bad!). I added 1/4 cup lemon juice to the apples. I added a pinch of salt to the crumb topping mix and just cut in softened butter. I will make this again and again. Thanks for sharing.

Homemade Potater Tots

Reviewed: Jun. 22, 2009
I just had to try these! We were so pleased. They were delicious. I did make 2 alterations. 1) I grated about 1 ounce of cheddar cheese and added to the mix. 2) After frying the first batch, I decided to toss the tots into a small container of flour and lightly dust them before frying. This kept them from "splintering" and leaving lots of crispies in the oil. Next time I make them I will add only 1 tsp. of salt. They were just a little salty and I like salty things! Also, I don't have a piping bag and a baggie didn't work for this so I simply rolled a handful into "large cigars" before chilling, then slicing. Mmm, anyway, they were very tasty and I will make again.

Jazzy Green Bean Casserole

Reviewed: Apr. 12, 2009
Well it was a change but not something I'll make again. I must admit I prefer cut green beans to French style and I might like it better using those but I'm not sure I'll make it again. Didn't taste bad just not something anyone raved about.

BLT Macaroni Salad

Reviewed: Apr. 12, 2009
This was good but really just tasted like regular macaroni salad with bacon and tomatoes and I guess I was expecting more. But it was eaten and it was good so you can't ask for much more than that.

Sam's Famous Carrot Cake

Reviewed: Mar. 8, 2009
This was really delicious with Cream Cheese Frosting II from this site. I made a 9x13 cake as well as an 8" round. Both were done baking within 35 minutes so definitely DO NOT "set it and forget it". The only changes I made were omitting the coconut, used pecans instead of walnuts and I increased the carrots to almost 3 cups.

Grilled Rib Eye Steaks

Reviewed: Sep. 15, 2008
This was really very good. Steak was flavorful and tender. I didn't use a drop of steak sauce and that's unusual for me. I used half of the marinade for the steaks,(4hrs), and I simmered and reduced the other half and we spooned onto white rice. I used the Forman grill which worked great. The sugars that burned just flaked right off. I will definitely be making this again. I did add about a tablespoon of finely chopped red pepper to the marinade. I freeze "chips" of red pepper and then it's really easy to finely chop them while frozen.

Mock Lobster

Reviewed: Aug. 31, 2008
This really did have a lobster taste and I couldn't believe it changed the texture as well. I did "think lobster" while eating it and definitely dipped it in the butter. I also marinated it for 48 hours because our plans changed and think I will do so again next time. If you don't dip it in the butter it doesn't taste as much like lobster but still is a delicious chicken.
