Ricotta Cheese Cake

This was fabulous! I baked it in a bundt pan as others suggested and added 1/2 cup of Splenda and a cup of mini chocolate chips to filling, omitted the sugar. Very moist and delicious.

Mama D's Italian Bread

Good flavor. I didn't give it 5 stars because it's a very sticky dough to work with and I used the the stand mixer with the dough hook too. Also didn't rise as high as I would have liked. The yeast may have "lost steam" by the time it rose two times prior! Will make again.

Angel Biscuits II

These were very good. I took the advice of another reviewer and preheated the oven to 200 degrees, turned it off and let the biscuits rise for one hour. I also cut the shorting to 1/2 cup total and used 1/4 cup of Crisco and 1/4 cup of butter. The problem was that I put all 24 on one baking sheet and they all ran together and the round biscuits took on the shape of the baking sheet and became square. It certainly didn't hurt the taste and could still be separated. However, you might want to space them out a tiny bit more. A very good recipe and I will make again

Country Apple Dumplings

This is very good and can easily be made lower calorie with the use of 1/2 Splenda and sugar, reduced fat Crescent Rolls and with Diet Mountain Dew. Some of the larger pieces of apple were still a little "al dente," but I'm not sure that's a real problem. It may have browned quicker than the apples could cook. This is easy recipe which will get rave reviews and will appear to have been a lot more work than it really was! Who knew you could cook with Mountain Dew?!

One Dish Jambalaya

This gets 5 stars for being very easy. I left out the peas since my son doesn't like them and used chorizo sausage, as that's all I had available. But very good and goes together very quickly. It tastes like you spent a lot longer time making it!

Todd's Famous Blueberry Pancakes

Very good and what I liked was that it was easy to throw together quickly. I doubled the recipe in order to have leftovers. I put some blueberries in the batter and added additional ones while they were cooking on the griddle. I also added a little extra sugar, almond extract and a dash of apple pie spice. Very good!! Like other reviewers mentioned, no need to let the batter sit. Can be used right away.

Chicken Fried Chicken

This was great. I doubled the recipe because I had more than 6 chicken breasts. It worked out perfectly and didn't have to use a lot of oil. I browned the chicken in the frying pan and finished them off in the oven. Drained them on a rack over a cookie sheet until the rest of the meal was ready. There was not a single piece left. Thank you, this one is a keeper!!
