Sour Cream Coffee Cake I

I'd never made a coffee cake before, and this turned out just great! Very moist, flavorful, and pretty easy to whip together.

Spicy Corn Muffins

I didn't find these very good when I followed the recipe exactly. Just fairly blah despite the chilies, they didn't get eaten much at the potluck I brought them to. I made a second bactch without the chilies and an extra two tablespoons of honey, that improved them a bit but then they were just regular cornbread muffings, nothing special.

Russian Cabbage Borscht

Delicious. Definitely hold the caraway if it's not a flavor you're a big fan of, it's pretty strong in this. One thing I'll change next time is adding more liquid, I prefer that it have more broth. At least another cup or two of veggie broth and a half a cup more of tomato puree would help.

Russian Green Bean and Potato Soup

I wasn't so sure about this on my first bowl, fresh out of the pot. But honestly, the longer it has sat in my fridge, the better it is tasting (flavors are melding, perhaps?) and now I really like it. I made a couple minor changes: used all purpose instread of red potatoes, regular instead of whole wheat flour, and about a tablespoon of dried dill instead of fresh.

Green Chile Spinach Quiche

I baked this the night before, then reheated it in the microwaveand right before an office bruch, and it turned out really nice. I made it crustless since I couldn't put a pie pan in the microwave, added half of an onion diced, and totally forgot to put in the melted butter but otherwise stuck to the recipe. It was a big hit!

Vegan Cupcakes

Very good! These were enjoyed by both the vegans and the ominvores among us. I used vegetable oil because the coconut oil was a bit expensive. Actually this made it a lot easier than other baking recipes that require creaming butter, beating eggs, etc.

Slow Cooker Stuffing

Great! As far of the issue of how much broth to use, I started with about a cup, then added two more over the cooking time. It definitely was moist enough without the remaining cup.

Buttermilk Pound Cake II

This was good, though I thought it could have been a tad moister. I subbed fresh squeezed juice of one lemon in stead of extract. Also, as some other reviewers have said, it's a bit plain as is. I glazed it with a store bought lemon curd, which complimented it nicely.

Home-Style Yeast Bread

Very nice! I'm not super into bread, but I and my Thanksgiving party really liked it. It has a pleasant, mild sweetness. My husband who actually made it said it was pretty easy.

Sweet Potato Pie I

This turned out really well, though I did make some of the changes suggested by other reviewers. I added a couple squirts of lemon concentrate, used a half cup of white sugar and a half cup of brown, and soy milk instead of regular milk. I also discovered halfway through that I didn't have nutmeg so I substituted a couple of crushed whole allspice and another dash of cinnamon.

Hot German Potato Salad III

Though I've eaten a lot of homemade german potato salad, this is the first attempt I've made to make it myself. This turned out very much like my family recipe. I substituted fake bacon for the real bacon so everyone at my office party could enjoy it, and it didn't seem to make any difference to the end result. I did need more moisture when adding the dry ingredients to the onions and "drippings", but just adding the water and vinegar early solved it.

Easiest Eggplant

Well it WAS easy, but it was pretty boring when it came time to eat it. Just not much to it. We added spaghetti sauce and that worked well, like an eggplant parmesean.

Mock Champagne

I made this for a baby shower, got many rave reviews. I definitely recommend garnishing with a rasberry or strawberry to give the illusion of champagne. I bought plastic champagne glasses for fun, it was very cute. Instead of an ice ring I made ginger ale ice cubes out of my various shaped ice cube trays.
