Beth's Spicy Oatmeal Raisin Cookies

This recipe seems to have been given a bad rap. It is really quite good and easy. I did however use only butter because I hate crisco in cookies. I also think that they cloves were a little strong for my taste and I will likely cut them back next time and try a little nutmeg. Just don't walk away from these cookies! They must be taken out when the edges begin to look done. They will NOT look done in the middle on top. Don't worry about that. They continue to cook once out of the oven if left on the cookie sheet. Let them set there until cool and they will be perfect! the three dozen I got from this recipe were gone in TWO DAYS!

Best Chocolate Chip Cookies

This was wonderful. It has replaced my standard chocolate chip cookie recipe and my Boyfriend fell in love with them. I didn't change a thing but may add half a cup more chips next time because he likes them very chocolaty.

Hugh's Dry Rub

Easy and wonderful if you don't make the mistake I did. RUB means use very little and really rub it in hard. Not smash each side of the meat down into a bowl of the stuff! LOL a learning experience for me. It was wonderful when used correctly.

Nacho Cheese Sauce

very quick and easy and hit the spot. especially becasue store cheese sauces are so expensive. I added green chilis and will use jalapeno's next time for a spicier cheese. We had it on nachos, taco salads, and baked potatos.

Anniversary Chicken I

Wow was this recipe a pleasant surprise! I was a little skeptical but I had all the ingredients and there was no marinating, no basting, nothing that took a lot of time. Let's just say it was a huge hit. My Boyfriend immediatly asked when we would have it again. The only difference I made was that I used reall bacon crumbles. It may have added a little grease, as mine didn't come out as pretty and neat as the other pictures. Mine was quite runny but I just scooped up the goo and put it on top of each breast and it was wonderful! I would recommend this to ANYONE!

Honey's Butter Cake

This cake was DeLish! It is quite rich and buttery and the cinnamon sugar in the middle can end up tasting like a streudal topping whe it's all gooey. The only thing that I didn't do was use all the cinnamon and sugar mixture. For one thing, this batter doesn't "pour". It's a plop and smoosh sort of opperation that made it quite hard to get half in the pan and then the other half on top of the cinnamon sugar. At any rate, I only used about half of the mixture and it turned out great. I can't imagine using all of it. There is no need for any kind of icing or glaze but next time I might make a kind of fruit syrup for topping. Something with a little bite like raspberry or rhubarb would be a great complement to the richness of this cake. I have also thought of using applesauce in place of the sour cream to lower the fat content. I don't know how that will turn out but this recipe made its way inot my "family" cookbook right away!

Cream Cheese Frosting II

Superb icing! My favorite now! I used it to dress up these near failures of cookies and it is amazing! Will use this again and again, I guarantee! Also, it transfers to smaller batches very well. I only used 1/2 package cream cheese and the rest was scaled to that size and it came out great!
