About this Cook
I'm a college student studying to be a high school English teacher. I have one year left! We are already planning my Grad party lol. I have a wonderful boyfriend of 5 years who just recently put up with trying another flop of a recipee. He is so sweet. I love you bake and i'm just teaching my self more about cooking. I usually don't have any dinner fiasco's anymore but let me tell you, that first shot at mashed potatos was a disaster. lol
My favorite things to cook
I love you bake. brownies, cakes, cookies, anything that I have the stuff for. As far as cooking, I really like to make simple things taste amazing. Chicken parmesan is one of our favorites and so easy. I'm a big crock pot fan and even make full pork loins in it!
My favorite family cooking traditions
We don't really have any. But my boyfriends family has sticky pecan rolls and hot spiced cider for breakfast on Christmas day and I love it.
My cooking triumphs
Parmesan chicken, brownies that score every time, a chip dip that might kill you but is oh so worth it, and my signature baked chicken strips. My boyfriend requests those about three times a month. lol
My cooking tragedies
baked potatoes, steam veggies, Baked French Toast, eggs over easy, home made pizza crust.

Beth's Spicy Oatmeal Raisin Cookies
This recipe seems to have been given a bad rap. It is really quite good and easy. I did however use only butter because I hate crisco in cookies. I also think that they cloves were a little strong for my taste and I will likely cut them back next time and try a little nutmeg. Just don't walk away from these cookies! They must be taken out when the edges begin to look done. They will NOT look done in the middle on top. Don't worry about that. They continue to cook once out of the oven if left on the cookie sheet. Let them set there until cool and they will be perfect! the three dozen I got from this recipe were gone in TWO DAYS!

Best Chocolate Chip Cookies
This was wonderful. It has replaced my standard chocolate chip cookie recipe and my Boyfriend fell in love with them. I didn't change a thing but may add half a cup more chips next time because he likes them very chocolaty.

Hugh's Dry Rub
Easy and wonderful if you don't make the mistake I did. RUB means use very little and really rub it in hard. Not smash each side of the meat down into a bowl of the stuff! LOL a learning experience for me. It was wonderful when used correctly.
