Joe's Famous Michelada

I'm reviewing this reluctantly, as clearly the submitter and her family, and others enjoy this. But this was really not very good, and after doing some looking, it seems that the proportions are "backwards" from most michelada recipes. This had one part beer to 3 of clamato -- the majority of recipes are showing 1 part clamato to 3 or 4 parts beer! No offense, but to me, this ended up being bizarre tomato juice, rather than a beer cocktail. I think I will try a more "straight" version, and honestly, I hope someone posts "the usual" version so that there's better representation and choice regarding this drink.

Joe's Special Scramble

Hearty and tasty. Fresh spinach is the only way to go with this dish, however; use 1/2 pound (stems removed,or use the bagged stuff.) It cooks very quickly and gives a far better flavor. I used only half the onion, but added a touch more garlic, as it really complements the beef and spinach.

Chicken Cacciatore Delight

Great dish! I've made mine pretty much the same way, but never thought of the sherry, and that adds a great bit of oomph. The mushrooms are fabulous, too. Thanks, Carole!

Detroit-Style Coney Dogs

Although I've had chili dogs, I did not realize the correct way to serve coney dogs was with mustard, and now I see that that's the only way to go! (Minor correction - I think you meant 4 hot dog buns, not 1.)

Schnitzel

Some of you noted that this is like chicken-fried steak. Chicken-fried steak is considered a Texas dish, BUT a lot of Germans emigrated to Texas. So chicken-fried steak is German Schnitzel, translated to American food products. Mystery solved!

Cumin-Coriander Pork Rub

Used a few tablespoons of this on pork roast one Sunday, and it flavored the meat very well! Coriander added a unique punch. I like the idea of using it as a gift too; it would be a foodie gift that stands out from the usual.

Potato Chip Chicken

Deliciously crunchy! This is an excellent oven-fried chicken recipe. I did not marinate it in the butter, though, just rolled chicken in the butter and then rolled in the chip-crumbs. I used plain chips, but will try this with other flavors for variety. UPDATE: I like this with plain chips, but it is especially good with BBQ chips. I thought I would like Sour Cream 'n' Onion, but am sorry to report that it didn't add any particular flavor. (In fact the SCO flavor got "lost".)

Mojo Roast Chicken (Pollo Asado)

I liked this very much! I'm falling in love with Cuban food, at least the dishes on this site! Made as written, except did not heat garlic & spices in olive oil first, and I am sure it would have been even more tasty if I had. Even with unheated oil it was 5 stars!

This was good, but I think I would add more raisins. I also doubled the cinnamon. I had some concern when I put the filling in the pie as it seemed rather liquidy, but it baked up nicely!

Danish Peppernut Christmas Cookies (Pebernodder)

Thank you for this recipe! Unfortunately, much of my Scandinavian heritage seems to have gotten lost in the old country, so this was a tasty restoration! I used to live in OR, and though I never got to Scandinavian Fest, this brought back memories of Junction City/Eugene/Willamette Valley! Takk!

Homemade Butter

This was a great way to use up leftover whipping cream. Very easy to make. I had ultrapasteurized cream, but I am curious about how this would work with raw cream. The only downside was that the "buttermilk" didn't past the Husband test, as it was bland, but that may be because of the ultrapasteurization.

Easy Cheesy Chicken II

Easy and tasty, with a very savory flavor. Per the reviews, I did season the chicken beforehand (opting for paprika and black pepper.) Did not top with shredded cheese, as I thought that would distract from the crisp cracker crust. Great way to change up the baked chicken routine, and best of all, my husband loved it!

Classic Cuban Midnight (Medianoche) Sandwich

This was good, similar in flavor to a ham'n'cheese with a twist, to my taste. However, my better half really liked it! I had to improvise with the griddle/skillet thing, and I do say that 8 minutes (4 min. a side) was a bit too long- it got a little too *carbonized*. If your pan is hot as it should be, 3 minutes is plenty!

Orange Glazed Carrots

The flavor concept was great, but after reading reviews, I was concerned about sauce consistency. So I cut the sugar down to 1 Tbsp., and cooked the carrots in the orange juice. (Basically, I made Julia Child's recipe Glazed Carrots, but substituted oj for the broth. From Mastering the Art of French Cooking I - not an intimidating recipe at all!) I did not use the cornstarch.
