Em and Nic's Apple Chicken

My husband and I enjoyed this recipe very much. The curry was a great touch. We experimented and found that one can also make it with pork for a nice change, especially in Autumn. (In fact, we prefer it that way.)

Easiest, Amazing Guacamole

Quite good, and worked very well in taco salad. For eating with chips, however, I added a tiny bit of minced onion. Admittedly, I used salt and granulated garlic instead of garlic salt.

Smoky Mountain Chicken

This was tasty, a real hubby-pleaser! As many of you said, like some of the restaurant entrees we enjoy, but better. (Easier on the pocketbook, too.) I served this with rice, made extra garnish, and had rice with the extra garnish for a side dish.

Green Pepper Pork Chops

Honest, simple, delicious. I omitted the browning sauce, opting instead to sear the chops well. For a fun twist, substitute green onion for the regular onion.

Joe's Special Scramble

Hearty and tasty. Fresh spinach is the only way to go with this dish, however; use 1/2 pound (stems removed,or use the bagged stuff.) It cooks very quickly and gives a far better flavor. I used only half the onion, but added a touch more garlic, as it really complements the beef and spinach.

Schnitzel

Some of you noted that this is like chicken-fried steak. Chicken-fried steak is considered a Texas dish, BUT a lot of Germans emigrated to Texas. So chicken-fried steak is German Schnitzel, translated to American food products. Mystery solved!

This was quite good, very much like the horchata we've had at the local taqueria; very well-flavored. I would suggest grinding the rice first, then adding the water, however.

Roasted Asparagus and Garlic

My husband and I adore asparagus, and this is a great new favorite. Using the foil makes for an easy cleanup. It's fun to change it up with different herbs, and I like to keep the asparagus whole for a pretty presentation.

Although I've had chili dogs, I did not realize the correct way to serve coney dogs was with mustard, and now I see that that's the only way to go! (Minor correction - I think you meant 4 hot dog buns, not 1.)

Taco Seasoning I

I omitted the red pepper flakes, and on the second batch cut the chili powder just a bit (basically used a scant measurement) but overall, the balance of spices is just right. It's more fun to make spice mixtures than buy them, and they taste so much fresher that way.

Simple Arrabbiata Sauce

This recipe was spot-on. The only changes were to use a few Tbsp. dried basil, as I didn't have any fresh, and I also sauteed the garlic and spices together before adding crushed tomatoes. Consistency is very good, as is the spice level. Great quick sauce!

Mexican Strawberry Water (Agua de Fresa)

My pitcher would only hold 7 cups of water, which still worked well, and gave it more intensity. It is rather sweet, so one could use 3/4 c. sugar, depending on the quality & sweetness of the fruit. Another reviewer said you could make this with other fruits, so I also tried this with honeydew, and it was marvelous!
