Joe's Famous Michelada

I'm reviewing this reluctantly, as clearly the submitter and her family, and others enjoy this. But this was really not very good, and after doing some looking, it seems that the proportions are "backwards" from most michelada recipes. This had one part beer to 3 of clamato -- the majority of recipes are showing 1 part clamato to 3 or 4 parts beer! No offense, but to me, this ended up being bizarre tomato juice, rather than a beer cocktail. I think I will try a more "straight" version, and honestly, I hope someone posts "the usual" version so that there's better representation and choice regarding this drink.

Kiwifruit Muffins

I enjoyed these! I omitted the raisins and subbed ginger for the allspice & cinnamon, and it worked out fine. The muffins are nice and moist, and the only reason I'm giving it a 4 is because I think that it needed just a tiny bit more kiwi -- maybe puree another half a kiwi. Agree with other reviewers that if your kiwi is tart, do not stint on the sugar...

Homemade Butter

This was a great way to use up leftover whipping cream. Very easy to make. I had ultrapasteurized cream, but I am curious about how this would work with raw cream. The only downside was that the "buttermilk" didn't past the Husband test, as it was bland, but that may be because of the ultrapasteurization.

Oriental Pork Cabbage Stir-Fry

I enjoyed this. I lessened the amount of ginger,and would say that you don't have to add it, but you will get a milder flavor, and I agree with the hint of adding some sherry. I also sauteed onion. This was like a wonderful entree at a Japanese food stand that my husband and I used to go to. Nice, homey flavor, and a mild and somewhat familiar dish for picky eaters.

Chrissy's Sweet 'n' Sour Tomato Salad

This was pretty good. One has to take care to adjust proportions, of course, but very adaptable. It's a little sweet for my taste, but a hit with my bettter half!

Moo Goo Gai Pan II

This is becoming one of my go to chicken recipes. I sub bamboo shoots for the water chestnuts, but either is fine. I also sub broccoli for bok choy, because that's what I'm used to. Delicious!

Taco Chip Chicken Wings

One of my fave ways of doing chicken. I melt a little butter in the baking dish and roll chicken in that and then the crumbs (this solves the sticking problem), and I also use other chicken parts for a main dish. For from-scratch types, you can also use the taco seasoning recipes on site for a good result. Yumm!

Potato Chip Chicken

Deliciously crunchy! This is an excellent oven-fried chicken recipe. I did not marinate it in the butter, though, just rolled chicken in the butter and then rolled in the chip-crumbs. I used plain chips, but will try this with other flavors for variety. UPDATE: I like this with plain chips, but it is especially good with BBQ chips. I thought I would like Sour Cream 'n' Onion, but am sorry to report that it didn't add any particular flavor. (In fact the SCO flavor got "lost".)

Easy Cheesy Chicken II

Easy and tasty, with a very savory flavor. Per the reviews, I did season the chicken beforehand (opting for paprika and black pepper.) Did not top with shredded cheese, as I thought that would distract from the crisp cracker crust. Great way to change up the baked chicken routine, and best of all, my husband loved it!

Simple Roasted Chickpea Snack

Fantastic! Great flavor and texture, and gotta love the healthiness of this snack! I did rinse and dry the chickpeas well before adding to the spices and oil My oven seemed hot, so I was took them out them at 35-40 minutes, but did shake them about halfway through, and had no problems. Very more-ish.

Cheddar Garlic Biscuits

What a a great way to change up the biscuit routine! I used green onion tops as the onion component; it added a nice oomph. Adding some parsley is great, if you like it. Similar to that seafood restaurant's biscuits, but better, because of the homemade taste.

Mojo Roast Chicken (Pollo Asado)

I liked this very much! I'm falling in love with Cuban food, at least the dishes on this site! Made as written, except did not heat garlic & spices in olive oil first, and I am sure it would have been even more tasty if I had. Even with unheated oil it was 5 stars!

Orzo and Rice

Great recipe; nice play of textures between the pasta and rice. I did use homemade broth in lieu of boullion, and both starches absorbed the broth and butter flavors nicely. Delicious!

Classic Cuban Midnight (Medianoche) Sandwich

This was good, similar in flavor to a ham'n'cheese with a twist, to my taste. However, my better half really liked it! I had to improvise with the griddle/skillet thing, and I do say that 8 minutes (4 min. a side) was a bit too long- it got a little too *carbonized*. If your pan is hot as it should be, 3 minutes is plenty!

Danish Peppernut Christmas Cookies (Pebernodder)

Thank you for this recipe! Unfortunately, much of my Scandinavian heritage seems to have gotten lost in the old country, so this was a tasty restoration! I used to live in OR, and though I never got to Scandinavian Fest, this brought back memories of Junction City/Eugene/Willamette Valley! Takk!
