Tasty Breaded Seitan

I recently watched a cooking show that featured seitan. I had never tried it, but thought I would test it out and see how my family liked it. My kids and husband all thought it tasted pretty good. (They all said they would prefer chicken cooked this way, but they liked this too.) All have rejected tofu and other soy meat replacements. Thanks for a tasty way to introduce to seitan.

The Best Rolled Sugar Cookies

I did a bit of experimenting on these cookies. When I rolled them 1/2 " and baked them 6-7 minutes, they were more soft and I could taste the flour more. When I rolled them to 1/4" and baked them 8 minutes, they were crispy and I could not detect the flour flavor. My family likes sugar cookies with a buttery bite to them, but I know there are plenty of people that love the softer texture with the subtle flour taste. This recipe is great in that it offers both. On a different note, the dough was very easy to work with. I chilled mine several hours, and but it back in between batches. The dough is easiest to roll out when it is cold.

Deviled Eggs

My Grandmother used to make deviled eggs with sweet relish in them. This reminds me of that due to the vinegar and sugar, but without the crunch. My 3 year old daughter helped me, and had a great time making and eating them. I just added a pinch of salt, as there seemed enough saltiness with the mustard. I also used the heart healthy Smart Balance mayo, and I was very pleased with the results. I'd describe them as sweet with a touch of tang

Polly Welby's Excellent Chocolate Mousse

Tastes great! It doesn't look so great, though. Hopefully others can learn from my mistake. I cooled the chocolate as directed. In the meantime I chilled the bowl and whisk I was going to use to whip the cream. DON'T DO THAT. When I went to fold in the chocolate, it hardened too quickly because of the chilled bowl etc. It made little chocolate bits through, instead of a consistent chocolate flavored mousse. I'm sure the recipe would have turned out great had I not done that. I suspect my family will love this special Valentine's Day dessert anyway!

Make-Ahead Mashed Potatoes

I really liked the taste of this dish. I agree that it is not the same is traditonal Sunday whipped potatoes, but is a great alternative when time is an issue. I made this for Christmas, and my whole family enjoyed it. I did add a bit of milk to them so they weren't quite so dense as I heated them up.
