Jumbo Fluffy Walnut Apple Muffins

These are so good! I made them healthier by using Splenda instead of sugar and water instead of milk, and I didn't even put the crumble topping on them. They turned out a little crunchy on top and so light and fluffy inside! So good, I love this recipe!

Mom's Island Treasures

These taste awesome! Such a great twist on chocolate chip cookies. However, I had to add a good 1/4 cup of vegetable oil in order to make the cookie dough managable enough to roll into balls. It was far too dry and flaky.

Easy Apple Rhubarb Jam

Love it! Tastes amazing! But, just as a side note, if you're a beginner at canning, apples don't set the same way strawberry or other jams set. It won't be solid, even after the cans seal themselves. Apples have too much acid to set solidly. I learned that from my sister-in-law after I questioned her about the texture of this jam. Thanks for such a great recipe!

Scalloped Potatoes I

These scalloped potatoes are great! The taste is good, but be sure to cook them a little longer than the stated 45 minutes or the potatoes will still be on the crunchy side.

Crab Dip

The taste was great, how the texture was a lot more "solid" than expected. I wasn't able to dip into it, it had to be cut apart with a knife and placed onto crackers that way. But it tasted awesome.

Peach Cream Pie I

The pie was excellent, however I did have to cook it an additional 15 minutes, and somehow I think there was a little too much cream mixture because it boiled over all over inside my oven. Besides the mess, the pie was absolutely fantastic! And I will make it again, but I will not use all the cream mixture.

Peanut Butter Balls V

I didn't even dip 'em, because they were so good just they way they are! I did, however, roll them in white sugar ratehr than icing sugar (all I had left)...amazing! Will make these again and again!

Jalapeno Cheese Squares

Mmmm! I am giving it 4 stars purely because I can't see cutting this into squares and serving it like that. It's too "pie-ish" in consistancy. But I tell ya, I served it warm with salsa and sour cream on the side and it was awesome! This is an awesome appetizer as a jalapeno cheese pie! I did use about 6 jalapeno peppers as well, and it was great, not overly hot! I love this!
