Grilled Shrimp Scampi
I live in Phoenix and during the summer the oven is off limits, so I was super excited to try this out. This was SOOO good! I reserved some of the marinade and tossed it in some angel hair pasta with some parm cheese. The starch thickened it into a nice sauce. With some steamed broccoli this was an super dinner. Inexpensive, way easy, and gourmet! A favorite in my house for sure.

Waldorf Astoria Red Cake
Red Velvet cake is my boyfriends favorit cake, so naturally I have been striving to make the perfect one. Of the recipes I have tried, this is absolutly the best one. I don't make any changes, but I do use a differnt frosting. The cake turns out red and fluffy and delicious every time.

Kalua Pig in a Slow Cooker
OH MY GOODNESS, this was sooo good. I made this for my mother and her bf and they both couldn't get enough. I was not sure how it would turn out with no liquid in the pot to begin with, but the drippings from the pork was excatly enough. I used the black sea salt and hickory smoke. Once the roast was falling apart, I shredded it and put the meat back in the juice to moisten it, this is a VERY important step, otherwise the meat is dry. Very good, can't wait to have it again!
