Pineapple and Apricot Skillet Chicken

Overall, I didn't like this recipe. I thought the sauce was the consistency of baby food which turned me off from the beginning. Texture aside, the flavor was OK, maybe a little too sweet for dinner. I'd leave out the sugar; there's plenty of sweetness in the fruit. I also added some garlic powder. I did cut up the chicken first, then removed it from the pan while I added everything else and brought it up to a simmer, then added it back.

Cabbage and Pasta

I thought this was good, but not great. I was trying to use up some cabbage and made this as a vegetarian dinner but it definitely needed something more to bulk it up. If used as a side dish as suggested, it would probably be fine. As per other people's suggestions, I did cut the butter down to 1/2 cup (and probably could have used 1/3) and also added a bit more garlic.

Ginger Veggie Stir-Fry

This was delicious and so easy. The ginger flavor with the soy sauce was great and even a little mild even though I used more than the recipe called for. I used snow peas, carrots, broccoli and red pepper that I added a little after everything else so it wouldn't be overdone. I covered it for a few minutes to let everything steam once it was all in since my boyfriend prefers his veggies a little more well done. Will make again, great base recipe that can be made with whatever you've got.

Red Enchilada Sauce

I followed the recommendations of other reviewers and omitted the basil and oregano to lessen the Italian flavor and used paste instead of sauce. I also added a bit more chili powder and, because I didn't think it was spicy enough I added some sauce from canned chipotle in adobo. I also cooked it about an hour. I didn't have any salsa either so I minced up an Anaheim pepper and used that instead for some more spice too. It was a little thick after that time; I would have added a little more stock (which I substituted for water) later in the cooking to thin it out since I cooked it so long. Also, one big thing. It was NOT enough sauce to coat 8 tortillas and put some on the bottom of the pan and cover the enchiladas with some sauce. I had to use some jarred sauce just to have enough for a full recipe of enchiladas. I'd double it next time for sure.

Greek Butter Cookies

I thought these were fabulous. I followed others' suggestions and doubled the vanilla and almond extracts. I got about 30 cookies in all; could have made maybe a few more but I was out of cookie sheets. I did 10 rolled in powdered sugar, 10 I flattened and sprinkled with cinnamon sugar before baking, and 10 I flattened and dipped in dark chocolate once cool. The powdered sugar ones were the household favorite. The cinnamon-sugar ones were basically snickerdoodles, and the ones with the chocolate I felt overwhelmed the subtle flavor of the cookies themselves. I think this is a really easy, delicious, and versatile recipe.

Beet Bundt Cake

Wow, really good recipe! I could not tell there were beets in this and I DON'T like beets so I would have noticed. I did replace 1/4c flour with unsweetened cocoa and had probably closer to 1 1/2c beets than 2. It was very magenta before baking but it smelled like chocolate. After baking it looked just like a chocolate cake, very dense but moist. Some people said it was too sweet, but I didn't want a bread-like, light and healthy cake, I wanted a real cake so the sugar was just fine. I wish it had frosting though, next time I will add some.

Chocolate Chip Coffee Cake

Really good and easy to make. I put more chocolate chips on top instead of pecans because I always prefer chocolate to nuts. That also gave it a Mexican chocolate flavor with the cinnamon baking right into the chocolate. But DON'T wait until it's cool to eat it! So much better warm. And the next day I heated up my slice in the microwave 15 seconds. It did dry out a little the second and third days; warming it and adding some whipped cream helped.

Beth's Spicy Oatmeal Raisin Cookies

I liked these but there was something about the texture that was just not perfect. The edges were a little crispy for what I'd expected and the middle was softer but it did have a sort of dry texture. They didn't melt in my mouth, more like crumbled. Maybe use all shortening? I'd probably make again trying a few alterations to get the texture just perfect for my preferences. They did get eaten all up, so I guess that means something!

Strawberry Muffins

I made "muffins" (actually made bread in a loaf pan, took 40 min) using the suggestions by everyone else. I added 1/2 teas. each of vanilla and cinnamon, an additional 1/4 cup brown sugar and 1/4 teas. nutmeg. With the additions it was pretty good, but I don't think I'd make it again. It wasn't fantastic and it didn't get finished. I didn't like the texture of the cooked strawberries; maybe if I mashed them more and it was more evenly distributed that would have been better. In all, I'd rather make strawberry shortcake with fresh strawberries :-)

Strawberry/Rhubarb Crumb Pie

I thought this pie was fantastic. I followed the instructions exactly except for coating the berries and rhubarb in some cornstarch before adding them to the filling. It was the best pie I've ever made, with Pie Crust IV from this site.
