Just for Christine and others that are wondering what to do with leftover mashed potatoes. here are some great ideas from the old country.

Gnocchi is a favorite in my house. There are recipes.. but the way I was taught was a couple of cups of leftover mashed potatoes, two large pinches of sea salt,  a egg, and a couple cups of flour ... kneed the flour in a few handfuls at a time. until it forms a nice dough . let it rest for ten minutes.

now you cut into four parts and roll each out into a snake roll.

now comes the really fun part :
with a fork cut into the snake about an half inch and pull in a rolling motion .. it take a bit to learn this so dont worry. it is something that comes with age the old gals would tell me lol

I put a cotton towel on a cookie sheet and place the pasta on the towel this way they wont stick together.  I let them chill in the frig a bit while I get the water boiling.

My favorite way is to fry up some onions and garlic in butter ... oh man there is nothing like it .. a bit of heaven I tell ya.

hey patty .. you can add sauce. personally I love mine with fried onions and peppers in butter and some graded cheese.. to die for I tell ya.

hey christine .. you are welcome.. I always boil 5 pounds of potatoes.. I save on time and the gas of having to do it again and again. I can mash them and use the extra for other meals.. I can slice some for hashbrowns or salads.. casseroles.. soups.. :)

We're doing pierogies with our potatoes today at my house. I already made a good amount of manicotti so the idea of more pasta of any type got me a few frowns when I suggested gnocchi. Snow drifts up to 4ft and a broken down truck with no 4WD to even attempt going outdoors so we are all staying put! If you live in the snow belt of this state then you will appreciate this story of how my 4WD is now a 2WD at the moment. My boyfriend had a "King Kong" moment as I like to call it. He decided that there was no need to clear the snow bank that city had plowed across my driveway. It was all iced up by the time he decided to pound on his chest as the proverbial alpha-male on the block and show the rest of the men just how its done! After blurting a few words regarding how there is no reason the truck can't overcome this snow, coupled with his own over-confidence of driving in the deep snows of his home town of Pennsylvania and the mid-west when we lived in the Dakotas, in an attempt to show off how a lifted pickup truck with monster tires handles the snow, he decided to plow right into the hardened, oversized pile of the stuff. Spinning tires, transmission burning and all of a sudden.."CHING! CLANK! CLANK! CLANK! and he snapped the U-joints on both sides of the front axel. I will inform you that a more humbled person continued to shovel snow like everyone else on our street and will now have to get down on the ground in this awful cold to repair the truck before I go back to work next week LOL. So...I am thankful that I have a fully stocked pantry and since we can't drive to our favorite Polish deli to get some of their pierogies, the kids has asked that I make my own. Mind you... I have never made them before in my life so this will be an experiment. Mashed potatoes are so versatile! I make a spin-off of an "egg ball" I tasted at a Guyanese restaurant. I take peeled hard boiled eggs and surround them in seasoned mashed potatoes, bread them and fry them. My Italian family thought I was nuts! But once they tasted it, they keep asking me to make them more often.

lol yankee manly men lol and their trucks.. just cause it worked when they played with tonka trucks doesnt mean you can do it with your chevy truck! I tell my man that several times a winter lol let me know how your pierogies turn out :) and no matter how bad a noodle turns out when ya add fried onions and butter .. its a master piece lol and lets face it our manly men will eat just about anything lol but I and sure your pierogies are gonna be great!

I come from a family of women that cooked from scratch. that grew what they needed and canned what was leftover. In my travels I have learned many different styles from other wonderful women. So it is more then just my family that has influenced me.
My cooking triumphs
there are many.. but the one that means the most is from my daughter when she telephoned me to get my baked ziti recipe her favorite. :)
My cooking tragedies
lol oh my there have been so many over the decades..lol from childhood baking brownies by myself and using a 1/2cup of salt lol instead of flour lol they smelled good and my mom, with that proud look, served the first piece to my dads boss lol I shall never forget that look on that poor mans face lol
