This is Fabulous! The flavors are well balanced and it's a hit with the kids. It's so easy to throw together with things that already in the cupboard. This is going to be a staple for us.
This time I scooped about 1/2 large can of refried beans in a large bowl with some shredded mozzarella, dried parsley, salt, pepper, and the chicken that I had cooked.
I cut the 5lbs of chicken into 1" cubes or smaller and fried them in some olive oil, garlic, and crushed red pepper. After cooking I opened a 15oz can of enchilada sauce and used some to thoroughly coat the chicken before adding it to the bean mixture.
I used corn tortillas that I had heated up to prevent cracking. I put a small amount of enchilada sauce on the bottom of the 9x13 pan then put the stuffed tortillas in the pan and topped with a small amount of the enchilada sauce and shredded cheese.
This was loved by Becky, Benie, Julie, Alesha, Anthony, Billy, Weston, Brandon, Brynne, and Myleah. They all had seconds.
