I'm 28 years old and loving life. I have the most wonderful daughter in the world who was born 7/21/11. Cant imagine life without her. I dont cook as much as I used to, lil one keeps me VERY busy. When I have a chance I do still love to cook and bake.
My favorite things to cook
I love spanish/mexican food. Spice is for me! But i do like to change it up and try new things.
My favorite family cooking traditions
Every year growing up we always had a big feast for Saint Patricks Day... And I would love to start some of my own traditions with my family! And of course keeping with the old.
My cooking triumphs
My family is really big on the whole saint patricks day dinner. Just look at my moms family all blonde hair and blue eyes!! Well my mom finally let me do the dinner at my house. Corn beef and all the fixings. Everything came out so tasty and my corned beef was so tender when i picked it up it broke into pieces! I can't wait to this dinner years to come.
My cooking tragedies
I just moved into my condo and I had an electric stove which I have never cooked on one before. Well I decided to be nice and make my boyfriend eggplant parmesan for dinner. I was moving the pan with the hot oil in it when a little and i mean a little spilt out and caught the whole stove on fire!!!!! Thank goodness my roomate was there to help me. Yeah my house now has a gas stove!!!

Buttermilk Pancakes II
This was okay. The recipe was very watery, I had to add 3 cups of extra flour!! Won't make again. This made enough pancakes to last all weekend.

Mom's Buttermilk Pancakes
I had to add an extra 3 CUPS of flour!!! If I didn't the batter was water. The taste was good and so was the texture. And by the amount of pancakes this recipe made it looks like we will be eating pancakes all weekend long.
