Kale and Feta Salad

Roasted Beets with Feta

I loved this recipe, but my family didn't. I used yellow beets instead of red, so it may have tasted different. I loved the idea of combining feta with cheese.

Fudge

This was really good, easy to make fudge. I can't believe how easy it was. I left out the nuts and added orange extract to get orange fudge.

Eileen's Spicy Gingerbread Men

This was a good recipe. I used black strap molasses and followed the recipe exactly. I found that keeping the dough thick made for chewy cookies. It was a nice adult gingerbread cookie- kind spicy.

Spicy Bean Salsa

The salsa was really good. I used kidney beans and white beans. I ate it as a salsa and then a salad the next day. I will definitely be making this again. It would be great to bring to a potluck.

Hawaiian Wedding Cake I

I loved this cake, it was different from other typical cakes. The coconut and pineapple makes it so unique. What I loved most was that it was so easy to make. I didn't have crushed pineapple, so I blended pineapple chunks in a blender and then added them. I topped the cake with a homemade cream cheese frosting.

Company Couscous

This was good. I didn't have fresh basil, so substituted it with another herd, fresh parsley. Instead of Parmesan cheese, I topped the finished dish with feta cheese and I think that added more flavour and depth to the dish. The dish was not very flavourful, so I added alot of Italian seasoning. If I make this again, I will cook the couscous in broth.

Sarah's Rice Pilaf

This was just a plain average side dish, not too great. I was out of orzo pasta, so used broken up spaghetti. It tasted just like the store bought rice that comes in a packet. I wish I had thrown veggies, Italian seasoning and herbs in it to give it more flavour.

Best Big, Fat, Chewy Chocolate Chip Cookie

These cookies were good. They weren't too sweet like chocolate chip cookies usually are, which I liked...I think the brown sugar made them that way. What I didn't like about these was that they weren't that soft of a cookie. Mine were a little hard on the bottom. I only used 1 cup of chocolate chips and that was plenty. 2 cups would definitely have been too many.

Cranberry Pistachio Biscotti

This biscotti was so crumbly for some reason. I followed the recipe exactly and the only ingredient I left out was the almond extract. I made this batch to give away as christmas presents. I dipped my finished biscotti in milk chocolate and then in holiday nonpareils. I had to discard 1/3 of the batch because they broke. The dough was very sticky, so you need to wet your hands when spreading the dough out into logs. I don't think I'll be using this biscotti recipe again, others have worked out much better for me.

Quinoa and Black Bean Chili

This was good. I was looking for a vegetarian chili since my mother is a vegetarian and this was a good choice, she really liked it. It was really thick though and I would have liked it to be less thick. If I make this again, I will add more stewed tomatoes.

Onion Roasted Sweet Potatoes

These were so delicious. They tasted great and I can't believe how simple it was to prepare this dish. Everyone enjoyed and thought I did an excellent job....haha,it was so simple. I will be making these again. They are a nice break from sugary yams or sweet potatoes.
