Carrot Cake III

This is the best recipe I have found for Carrot cake and is always a hit when I make it. I made small changes that makes the cake more to my family's taste. 1. substituted the veg. oil for equal parts olive oil and coconut oil (both unrefined) 2. Cut the frosting sugar by a cup and used coconut oil instead of butter. YUM YUM
