Ginger Scallion Japanese Noodles

Reviewed: May 23, 2011
Yum, yum, yum! The perfect quick and easy dinner, if you don't feel like cooking. Used soba noodles. Can't wait for green onions from the garden to use up in this dish. Possibly try using tahini in place of the oil.

Great summer side dish, made for Father's Day BBQ with parsley, dill, arugula, cress, kale, and spinach from the garden. Also put in onion and garlic scapes instead of shallots.

The perfect rich, creamy texture without too much oil or fat added. Didn't have enough nutritional yeast but it was still good.

YUM. Dangerously good. They were gone in one day. Used half WW flour and added a little gluten, used turbinado sugar instead of brown sugar. Let the dough rise overnight in the refrigerator. Well worth the work!!

Vegan Pumpkin Pie from scratch. Gingersnap Crust. - Healthy. Happy. Life.

Reviewed: Nov. 27, 2011
The crust makes this pie. Delicious. Used more cashews instead of tofutti. Skipped the swirling step. For the pumpkin, I needed 1 sugar pumpkin, 1 butternut squash, and half a kabocha squash to get the right amount of puree because so much water came out. Instead of arranging whole cashews around the rim of the pie, I scattered crushed cashews over top. Very delicious!

Gypsy Soup

Reviewed: Apr. 28, 2011
The seasoning in this soup is spectacular- it's the perfect combination of flavor: savory/sweet/salty/spicy. I enjoy making this soup with different combinations of vegetables, depending on what is in season and on hand. I always use homemade vegetable stock. I just made it with chopped collard greens and frozen peas (substituted for celery and green pepper) and it was delicious!
