Aegean Chicken Salad

Even though I don't associate chicken with Greek flavors I thought that this was really delicious and creative. I left out the onion and added a little garlic powder. I also didn't really follow the measurements of the recipe and did everything by taste/look while trying to keep the proportions the same, and it turned out just fine. Thank you for the wonderful recipe!

Cream of Asparagus Soup I

I did make some changes to this recipe... I used 2 1/2 cups of sodium-free vegetable stock and 2 cups of water in place of what the recipe suggested, and I left out the celery and soy sauce. I put in maybe a half teaspoon of salt and a very liberal amount of pepper to make up for the lack of saltiness. However, the asparagus flavor definitely showed through and tastes really great combined with the starchiness of the potatoes. I over pureed mine though--next time when I make it I will leave some chunks of asparagus and potato. This is excellent with herb bread or crumbled blue corn chips. Thanks for the great recipe!

Quinoa and Black Beans

So delicious! Unfortunately I didn't have any cilantro, but to give it a little more taste I added about half a teaspoon of Santa Maria seasoning (normally used a barbeque rub but I put it on a lot of things). I started eating it right out of the pot, it was so good. Also good on a toasted whole wheat pita and with baked tortilla chips. Thanks for a great and easy recipe!

Greek-Style Rib Eye Steaks

This was really good! I just wanted to add that I used two 1/2 pound flat iron steaks and it worked just fine... I cooked each side of the steaks for about five minutes on medium heat with the skillet covered and they turned out juicy and well-done, just how I like them. I served them with Greek gigantes (giant white beans) and green beans. Thanks for the great recipe!

Spaghetti Carbonara II

Very good! I used only 1/2 of a pound of spaghetti and kept the ratios of everything else the same because I like a lot of sauce, and it worked out well. Thanks for the easy and delicious recipe!

Homemade Black Bean Veggie Burgers

This was very good. I ran into some trouble with my mixture being too moist, but I just added more bread crumbs to compensate. Like other reviewers, I fried mine a little bit after baking to make them slightly crispy on the outside. I also added sweet white corn to the mashed beans, which was very good.

Thai Chicken Pizza

I didn't really care for this, so I'll review it for my boyfriend, who almost ate the whole thing over the course of a night. My problem was with the sauce--I didn't reduce the peanut butter like others had suggested, and I think I just bought a bad brand of sauce because normally I really like peanut sauce. We cooked the chicken with soy sauce and lots of lemon pepper and it was delicious! We also used a garlic naan for crust, which was really good. Anyway, make sure you use a good peanut sauce, and thanks to the submitter for an easy recipe!

Lemon Blueberry Drop Scones

SO good! I am eating one fresh from the oven right now and it's the best scone I've ever had. I had no problems with the recipe as it is (I also used raspberry yogurt instead of lemon). Thanks so much for this recipe!

Bean Potato Enchiladas

This was good, but I followed the suggestions given by other reviewers, so I don't know about the original recipe. I fried my tortillas while my potatoes were boiling, and sauteed the onion in the leftover oil. I added the olive oil and milk to the potatoes and mashed them up a little bit, but left in large potato chunks. I also used chili-and-lime refried beans, and added jalepenos. I used only one can of sauce and had no problem with moisture. I also added much more cheese to the top than the recipe calls for. I thought these were delicious and very filling--I didn't need to serve any side dishes except chips and salsa. I have a TON of leftovers, including a lot of leftover filling that will have to be used for burritos or something.

Spinach and Bacon Chicken

This was really, really good! I used cream of chicken instead of the heavy cream and it seems to have turned out fine. I also used turkey bacon, and possibly because of that didn't have any extra bacon grease with which to cook the chicken--no big deal, just added some olive oil. My only suggestion is that you don't have to use that much flour--one cup or one and a half cups would have been enough for the amount of chicken given. I also added some garlic and salt and pepper to the flour before coating the chicken. I served it with green beans, parmesan-garlic roasted potatoes and the rest of the bottle of Chardonnay I used to cook with. I think I might try this again with potatoes instead of chicken, and use it as a side dish and serve with roasted chicken.

Sunshine S'more Cupcakes

Delicious! I made one batch following the recipe exactly; with the second batch, I put the marshmallow fluff inside of the cupcake along with the chocolate, which I think I like a little better. Also, I did not use nearly as much fluff and graham cracker as the recipe called for--I think I used about 2/3 of a jar and three crumbled crackers.
