Slow Cooker Lemon Garlic Chicken II

Took several suggestions such as putting potatoes, onions and garlic in the bottom. Used bone in breasts and made a couple slits in the meat to help soak up flavor. I was missing oregano so I used Italian seasoning instead. I didn't brown the meat either. This was a keeper. Flavor was good. It looked pretty too. I took the sauce and boiled it down with cornstarch a bit of water and wine. I also put the leftover lemon from juicing in the crock pot which I actually wouldn't do again as i got a couple strong bites of lemon. I will defenatly make it again even with thighs maybe. I have always disliked chicken on the bone but this recipe changed that. The chicken was even frozen for at least 6 months and was still moist. The chicken sat out of the liquid because the potatoes were under. I thing that helped it not have that "crock pot" taste.

Roasted Green Beans

Made these last night. My 11 year old son said these green beans were the highlight of his day! Easy recipe. Mine took a bit longer to cook. I actually turned the oven up to 425 to speed it up but wouldn't do that again as a couple were burnt tasting I thought. Both kids loved them. I enjoyed them too.

Golden Potato Soup

I was worried it would taste too plain but it wasn't. I really like thick soup and this did the job. I did add 2 strips crumbled bacon and the bacon fat. I used 3 tsp flour. Part american cheese and part cheddar. I didn't rush cooking it. I will definitely make this again.

Easy Red Beans and Rice

Made this tonight with a few changes. I didn't have tomatoes so I used Progresso hearty tomatoe soup. Left out the pepper. More garlic. Emerils bayou seasoning. Left out oregano since soup had seasoning. Added some hot sauce. Moral is it was quick and easy AND my kids ate whole plates of it... That's a winner. For me I would add more seasoning and heat.

Potato Pancakes II

So I am making these now and have figured out that if you don't flatten them out enough they will fall apart. I also think that a lower heat is better. My first batch was on med high and I couldn't flip them at all, I threw them out. I lowered it to med low at 5 min a side and they are perfect.

Buffalo Chicken Dip

I made this with the same ingredients except low fat cream cheese and low fat cheese, didn't think anyone knew it was low fat. This was so yummy. My husband started eating it before I got it in the oven. I mixed most of the cheese in and some on top. I thought I might use a bit less hot sauce next time, maybe 1/2 cup. I did have left over as there weren't as many people at the party as I thought and it was better I thought even the next few days, so I would not hesitate making this ahead of time next time. I did add a little seasoning in the water when I poached the chicken, but don't think it made any difference. It was great with the celery sticks especially, so I would chop 2 bunches next time. The next day I made chicken salad with extra chicken I had and threw a scoop of this in it and what great chicken salad it made!

Chicken Gravy

I needed gravy to make stuffed chicken breasts, I like to put gravy inside with the stuffing. I literally just made this in about 2 min and I made my own poultry seasoning since I didn't have any. This is the perfect thickness for inside the chicken, nice and thick, not runny. I did use 1 3/4 cups of boullion and used milk to mix with the cornstarch. Can't wait to make the chicken tonight :)

Quick Zesty Chili

Was trying to figure out to do with some extra tomatoes I had and found this. I only found out that I didn't have chili powder so I used Taco seasoning instead (powder) which worked out well. I think the tsp of hot pepper was a bit much for my kids so I added some sour cream to cut that down a bit. Served with Tortilla chips. Very easy and would make again.

Persian Shish Kabob

Rotisserie Chicken

Yep, everyone said in the reviews that this was good and it was. I got a bit worried after I looked out in the first 7 minutes and the grill was on fire underneath and opened it up and the bird already looked a bit black and the strings I tied the bird with were gone. I took it off the grill and retied the legs and wings. But it turned out great. Cooking it on High the first 10 minutes sealed in all the juice. Very very moist and flavorful. Kids loved it too. I might use a bit less salt next time though.

Zucchini Herb Casserole

Well I didn't read the reviews until after I put it in the oven so I was a bit worried. I wasn't sorry though in the end. It turned out good. I did add some bread crumbs on the top and browned them at the end. I used shredded Mexican cheese. When I was putting in the seasoning, it seemed like a lot, so I reduced it. I may have not used as much zucchini as the recipe called for which might be why it turned out ok. The kids didn't like it but everyone else did. I would make it again.

Cilantro Chicken and Rice

This picture doesn't do the recipe justice. This was wonderful. I served to a lady from Costa Rica and she said it tasted just like home. My 5 year old son loved it too. I left out the chili peppers and we served them on the side. Great leftover too. I will definatly make this again.

Quick & Easy Layered Dessert

I was looking for something quick at the last minute. I didn't have pound cake so I made it with yellow cake mix. Everyone really enjoyed it. It is even good left over, not too mushy. It was light on a hot day too!

Zesty Grilled Chops

My husband says he only likes pork chops with shake and bake on them or a tenderloin. He says otherwise it's just a dry piece of meat. These came out great though. Very flavorful and moist. He ate it up! The kids didn't however... I should have done theirs plain. Used ketchup instead of chili sauce. I would definatly make these again.
