About this Cook
Hi Everyone! My name is Christina and I live in Pittsburgh (born and raised here) with my husband, Jim (we have been married for 11 years), my son Gabriel (he is 7), and our twin baby girls born June 22, 2011, Abby and Ally. I love cooking and sharing recipes and have a pretty extensive cookbook/recipe collection. I think my love of cooking comes from my mom and dad. We are definately a family that loves to cook (AND EAT!). I also enjoy watching hockey, LET'S GO PENS!, walking, crocheting and doing crafts. I am looking forward to meeting alot of new people here, and sharing tips and ideas.

My favorite family cooking traditions
Just cook with love and patience. I am 1/2 Italian and 1/2 Lebanese, so we have tons of family traditions.
My cooking triumphs
When I was maybe 12 years old, I had a dinner party for some close neighbors and I made stuffed shrimp, homemade gnocchi with sauce, salad, homemade croissants and creme caramel for dessert. I was so proud of myself. When I cook and I can see the look of enjoyment on the people I am servings faces, that is a triumph all in itself.

Texas-Style Baked Beans
This is my new go-to recipe for baked beans...AWESOMELY FANTASTIC!!!!!! I did halve the recipe, using 2 cans of pinto beans, drained and rinsed. These were super simple to make and the house smelled soooo good while these were baking. I always get baked beans from a local market that we always considered 'the best' baked beans, but these surpass those, and are waaaaay cheaper to make than those ones are to buy, so that's a bonus. I did measure all of the liquid ingredients and brown sugar, but I did eyeball the onions and red pepper, and I'm sure I used more of those than the recipe called for. If I could give these beans more stars, I would...these are wonderful~YUM, YUM, YUM!!!!! Thanks for sharing. :)

Cornbread Muffins with Cheddar Cheese
These are pretty basic, which is fine, if that's what you're looking for. We thought these were missing something...maybe more sugar? Sort of bland and we really couldn't detect the cheese, even though I topped them with extra cheese before baking. I also topped some w/ a slice of jalapeno from my garden, and that added a kick, which was nice. I don't know that I would be making these again, but Thanks for sharing the recipe. :)

Rice Patties
These were delicious, but they are really, REALLY hard to keep together, hence the 4 star rating. I used leftover yellow rice, so that added a nice flavor to these. I am wondering what I can add to hold them together better...I mixed everything up (even using all of the optional ingredients, except for the meat), formed the patties and let them 'set up' in the fridge all day before frying them in hopes of avoiding breakage. Some did stay together, but the majority did not. They still are delicious, and I plan on coming up with a solution to the breaking problem. Thanks for sharing. :)
