I was very excited to find out that one of this month's Ambassador assignments was to prepare recipes using Goya products. Those chosen, recieved a box in the mail loaded with all sorts of Goya produts (I swear I was like a kid in the candy store oo-ing and ahh-ing at all of the goodies), including Adobo seasoning with pepper, that I am now in love with and will never be without. I have been sprinkling it on anything and everything, lol...I LOVE IT!!!!! I have seriously been telling everyone who will listen about how great it is...It really is! I have purchased a few of their products in the past, and was pleased, not only with the reasonable price, but also with the quality. I was excited and eager to choose my recipes and get cookin'! The first recipe that I chose to prepare was 'Mediterranean Chickpea Salad':  http://allrecipes.com/Recipe/Mediterranean-Chickpea-Salad-2/Detail.aspx<  I knew right away that I was gonna like it because I like all of the ingredients that went into it, but this simple salad really exceeded my expectations. I made it up early in the day and put it into the fridge to allow the flavors to blend...YUM! Next on the list was the 'Chipotle Cheeseburger': http://allrecipes.com/Recipe/Chipotle-Cheeseburger/Detail.aspx<  Can you say AWESOME!!!! These were absolutely fantastic, and the chipotle mayo really put these over the top. Finally, I decided to make 'Cheesy Chicken and Yellow Rice': http://allrecipes.com/Recipe/Cheesy-Chicken-and-Yellow-Rice/Detail.aspx<  This was another winner! I've never made yellow rice before and didn't know what to expect...It was beyond delicious and so flavorful, though I did not use the cheese, because I wanted more of an authentic taste. Another Goya recipe that I have been making for a few years now is 'Empanadas (Beef Turnovers)': http://allrecipes.com/recipe/empanadas-beef-turnovers/detail.aspx<  I originally made these for Cinco de Mayo, but they are so good that the family requests them pretty often, and I'm happy to make them. Everyone who has tried them LOVES them.

After this wonderful expierence that I had with Goya, they will be my go-to from now on. If you're looking for yummy, simple and delicious recipes, give Goya's recipes and products a try...you will not be disappointed!

Yum, you make everything look so good! I love empanadas and was delighted to find the Goya discs. We'll be trying them out soon.

Those of us who love beans and often use them canned will vouch for the fact that Goya chickpeas are the best of all the brands. They are to closest to home-cooked I have ever found and make the smoothest hummus as well. Now I am going to try that seasoning on your recommendation. Thanks for the tip!

Hi Everyone! My name is Christina and I live in Pittsburgh (born and raised here) with my husband, Jim (we have been married for 11 years), my son Gabriel (he is 7), and our twin baby girls born June 22, 2011, Abby and Ally. I love cooking and sharing recipes and have a pretty extensive cookbook/recipe collection. I think my love of cooking comes from my mom and dad. My favorite family cooking traditions
Just cook with love and patience. I am 1/2 Italian and 1/2 Lebanese, so we have tons of family traditions.
My cooking triumphs
When I was maybe 12 years old, I had a dinner party for some close neighbors and I made stuffed shrimp, homemade gnocchi with sauce, salad, homemade croissants and creme caramel for dessert. I was so proud of myself. When I cook and I can see the look of enjoyment on the people I am servings faces, that is a triumph all in itself.
My cooking tragedies
None that I can recall, LOL!
