This was really yummy and easy. I didn't feel like defrosting my black beans, so I did mine with just a can of refried beans instead. It turned out super satisfying and tasty. I also paired mine with some spicy hot sauce and some sour cream.

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

This was soooo good! I didn't have any onions or shallot, but I used a few cloves of garlic instead. I also added some red pepper flakes and this was a huge hit!!

Creamy Zucchini with Linguine

This recipe will be added to our normal rotation. I can see that this might not be so good if you omit the 1/2 c of olive oil OR the pepper flakes. Those two ingredients really did it for me! I think I may add some mushrooms and/or bacon next time too!

Grilled Shrimp Scampi

This is the best shrimp scampi we've ever made! And we make it a lot!! The grilled shrimp in the yummy marinade really is delish!!

Potato and Onion Soup

I just used butter, substituted 1/2 and 1/2 for the heavy whipping cream, and used scallions instead of leeks. This was a very yummy dish (I did mix the second batch of butter with a few tablespoons of flower over heat first). My kids devoured this meal. Very tasty!!
