My breastfeeding baby has a milk protein allergy, and I can't eat butter, so I substituted equal amount of coconut oil for the butter in this recipe. Yummy! It turned out moist and delicious. My kids are eating it up too, and said "Mom, this is AWESOME bread!" I should also mention that I doubled the recipe, used only 1 cup of brown sugar, and used 2 cups of all purpose flour with 2 cups of whole wheat pastry flour. Also, I only had 4 cups of mashed banana, and added 1 teaspoon of vanilla. I will definitely make this again. Surprisingly, I din't taste any coconut.
