Sauteed Navy Beans and Artichokes

I reduced the oil, substituted in red pepper flakes, used plain artichokes (not marinated) and left out the cheese. The dip was pretty good, I will make this again. The red pepper was key. And I think lemon juice would help also.

Vegan Cheesecake

I used firm tofu that I drained for about 30 minutes, cut the sugar in half and baked for 50 minutes. I did chill the pie overnight. It was so good I'm making another before I finish the first so I don't run out! Next time I'm going to experiment with flavor and substitute coconut milk and top with pineapple.

Spanish Rice II

I made this last night, and it was very easy and tasty. I did saute the rice after the veggies had been in the pan a few minutes and I added 1/2 tsp cumin to the spices. Other reviewers said to add chicken broth or bacon grease, but the extra fat is not worth it, it's good as is.

Tomato Zucchini Casserole

The recipe is very easy and the dish turned out to be very tasty. I used a little olive oil instead of butter and added a few squash. I made my bread crumbs with 2 slices of wheat bread. I will defiantly make this again experimenting with different veggies next time.
