Spinach and Rice Alfredo

Yum! I sauted onions in garlic and butter. I didn't have cream so I used Philadelphia extra light with parmesan. Next time I think I'll add a splash of milk but there's definitely going to be a next time!

Maple-Glazed Sausages

I LOVE maple-glazed sausages! I cook the sausages on a foil-lined tray for about 15 mins in oven at 200C (with just a little olive oil), then add either maple syrup with cinnamon/ brown sugar or with sesame seeds to coat, return to oven for about 5 mins.

Southwest Sausage Lasagna

I don't think it was too much quicker to make, but it tasted great! I added roast butternut squash to sausage with chestnut mushrooms and onion.

Chocolate Chip Pancakes

added a little extra milk, separated the egg whites and beat individually before adding to mixture. also added vanilla essence and cinnamon. *Update* I have recently tried making these pancakes, adding smooth peanut butter to the egg/milk. Irresistible!

Broccoli and Sausage Cavatelli

This had excellent flavour, and was easy to make. I sauted the sausage with a dash of chilli oil, and caramelised onions, and garlic paste; boiled penne pasta, adding frozen peas for the final 2 minutes. I added the pasta and peas to the pan, with sesame seeds and parmesan, and stirred to mix evenly. I served with parmesan and freshly grated black pepper.

Cowboy Cookies III

I followed other reviewers' suggestion of reducing sugar; used a mixture of dark and milk chocolate chips, and added some chopped walnuts. Fantastic! **Update: I've made these again with choc chips and pecans. Some of the best cookies EVER**

Broccoli Cheese Bake

Good 'basics' to recipe- here's what I made: Onions- sauted with garlic instead of steamed; Steamed broccoli tossed with onions and sesame seeds; sauce - I added English mustard, Italian herb seasoning and cheddar/mozzarella cheeses finally for last 5-8 minutes in oven, I'd added chopped walnuts and some extra cheese. Great!

Chicken Casserole Mississippi

I did a few things differently- I didn't have noodles so used rice, added some Parmesan and milk to the sauce. Lastly, I stirred some chopped walnuts through, and sprinkled some on top with crackers. I'll make this again!

Three-Cheese Pesto Pizza

I guess I based a pizza very loosely on this recipe? I used prepared crust (Napolitina), with spaghetti sauce and Italian herbs. I covered with parmesan, emmental, white cheddar and mozzarella. My toppings were sausage and mushroom, sauteed, then mixed with a drop of maple syrup. I put little dots of cream cheese across it. Great!

Country House Bed and Breakfast Casserole

I made this with some leftover sesame seed bagels, sliced, buttered and diced, with Cheddar, cream cheese, ham, eggs and milk. I was out of mustard so added blend of Italian herb seasoning instead. Great!

Maple Mustard Chicken

I held back on 5 star as I didn't use vinegar, and cut back on garlic, but still really enjoyed this. I baked the chicken (with sprinkling of sesame seeds), and served with sweet potato mash. Great comfort food!

Pasta with Roasted Butternut Squash and Sage

I gave this 4 stars as I didn't quite use the recipe, more 'inspired by' this recipe. I roasted the butternut squash with a little olive oil and black pepper, and also roasted chicken breasts (with glaze of olive oil, soy sauce, maple syrup and French mustard). Then, I sauted shallots in butter, added butternut squash, chicken and peas, before adding single cream, 2 tablespoons of parmesan and some chopped parsley. Finally added the cooked pasta to the pan, and served with garlic butter.

Maple Bacon Pancake

5 star taste! I didn't want to use baking mix but used base of sausage and pancake casserole. I did use the cookie sheet, had scaled down to 2 servings and it cooked in less than 20 (+ 5) minutes. Great recipe, one to keep!

South-of-the-Border Scrambled Eggs

I didn't have tortilla chips or taco sauce but still had great brunch. I added chives and chili powder to the eggs, and served the scrambled eggs on toasted multi-seed bagel. One to keep!

Sausage Spanish Rice

I omitted the celery and used mushrooms instead. I used a lot more spice at the beginning- chili powder, paprika, turmeric and used basil/oregano mix to flavor the tomato sauce. Chicken stock instead of water. This is a versatile recipe which will use lots of veg well, with great flavor. And great served with sour cream!

Almond Rice Pilaf

Nice basic recipe.. I used italian herbs, garlic powder,mushrooms, peas and toasted pecans to flavor it. Nice, but quite mild. I think next time I'll either serve with a good sauce, or use different spices
